    About Kothavarangai Paruppu Usili

    Paruppu Usili is a very popular brahmin or iyengar recipe. Kothavarangai Paruppu Usili is made using cluster beans, lentils, herbs and spices. The only thing tricky is to get the dal cooked right, if its overcooked it will spoil the dish. Just follow the steps and make this tasty paruppu usili and enjoy!

    I have had many readers asking for cluster beans paruppu usili so thought its high time I post it with stepwise. We had it with rice and arachuvita kuzhambu.

    Kothavarangai Paruppu Usili Ingredients

    • Cluster beans – Cluster beans also known as kotharangai or seeni avarakkai is used for this. However you can use french beans or broad beans too.
    • Lentils – Toor dal and chana dal is combined and used.
    • Red chilies – Red chilies is used for spice.
    • Turmeric powder – Turmeric powder adds color and flavor to this dish.
    • Tempering – A simple tempering is made using oil, mustard seeds, urad dal, curry leaves, hing.

    How to make Kothavarangai Paruppu Usili Step by Step

    1.Trim the edges and chop cluster beans finely. Rinse it well and boil it with enough water for the veggie to get cooked.

    2.Once the beans gets cooked(turns soft), set aside. Now take both the lentils and rinse it well. Soak it in water for an hour at least.

    3.Drain water and grind the dals along with red chilies to a coarse mixture. Boil water in idli pan, spread the coarse mixture on the steamer plate and steam it for 5-7minutes.

    4.Once done cool down and then crumble it with your hands, set aside. Now heat oil in a kadai – add the items listed under ‘to temper’ let it splutter. Then add the dal mixture.

    5.Saute till golden brown then add the cooked cluster beans and mix well. Add required salt. Cook for 3 minutes until the dal mixture blends well with the vegetable. Switch off.

    Serve with rice and any curry of your choice!

    Expert Tips

    • Make sure to grind it coarse, if it becomes a paste then you will not get the perfect texture. So make sure to drain water completely.
    • Spreading and then steaming it helps crumbling easily.
    • You can use the same recipe for making with any vegetable you like flat beans, beans, vazhaipoo etc.
    • Add water only till immersing level of the beans, that is enough for it to get cooked.

    Serving and Storage

    Kothavarangai Paruppu Usili can be served with rice, roti etc. This curry keeps well in fridge for 2 days, reheat and serve it.

    Ingredients

    • 2 cups kothavarangai cluster beans
    • salt to taste

    To grind to a coarse paste:

    • 1/8 cup toor dal
    • 1/8 cup chana dal
    • 2 dried red chillies

    To temper:

    • 1 teaspoon oil
    • 1 teaspoon mustard seeds
    • 1/2 teaspoon urad dal
    • a sprig curry leaves
    • 1 pinch turmeric powder
    • a small pinch hing

    Instructions
