Idli dosa maavu paniyaram recipe crispy outer with a soft inner tastes so good for breakfast or for snack time.I usually make paniyaram using a batter specifically made for it but my neighbor suggested me to try this and I tried it for dinner and since then its regular at home.I even tried sweet paniyaram and it was tasty too, will post soon.

Ever since I bought my cast iron paniyaram pan which I love the most, making paniyaram is a breeze.I had nonstick first initially but thrashed it as I didn’t like the taste of the paniyarams using it.Then bought a indolium pan in Karaikudi, that came out super good but then maintaining it was a pain so was looking for alternative that’s when entered the world of cast iron and no looking back since then 🙂 2 Years back, I bought this cast iron paniyaram pan from a shop in 5 corner in Coimbatore which was Rs 300(as many will ask am posting this info here itself).

Idli dosa maavu paniyaram recipe

Idli dosa maavu paniyaram recipe quick and cripsy paniyaram ready in minutes.

Ingredients

  • 2 cups idli dosa batter
  • 1/2 cup onion(finely chopped)
  • salt to taste
  • 1 tbsp coriander leaves(finely chopped)

To temper:

  • 2 tsp oil
  • 1 tsp mustard seeds
  • 1 tsp split urad dal
  • 1 tbsp chana dal
  • 1 no green chilli(finely chopped)
  • 1 tbsp curry leaves(finely chopped)
  • 1/2 tsp grated ginger
  • a pinch hing

Instructions

  • Heat oil in a pan - add mustard seeds let it splutter, then add urad dal and chana dal fry till golden brown.Then add green chillies,hing,curry leaves and ginger.Give a quick saute.
  • Then add onion, required salt saute till transparent.Add this tadka to dosa batter.
  • Add coriander leaves,mix well.If needed add water.The batter should be semi thick,Set aside.Heat oil in a paniyaram pan.Add 1/4 tsp oil in each hole.Swirl the pan so that oil gets coated evenly in each hole.
  • Add batter in each hole.Cook covered for few mins until the top looks cooked.Cook in low medium heat.
  • Flip over and cook for a minute then remove, transfer to a plate.Repeat to finish the batter.
  • Crispy paniyaram ready.

Notes

  • The batter should be semi thick so adjust consistency accordingly.
  • You can add coconut bits if you like.

    Whats the best chutney that goes well with paniyaram?

      spicy garlic or onion tomato chutney is my choice.But any spicy chutney will go well
