    I wanted to try marble cake since long, searched for recipe and finally zeroed in divyas space. I have made this cake twice , once for my family and the second time for my best friend. Baking a marble cake is always special, each time you cut a slice to see a new pattern always surprises me. This cake is very soft, with the blend of chocolate and vanilla flavours its a perfect treat to anyone. Everyone loved it at home and I had a good feedback from my friend too – She said “the moment I opened the box I could feel the aroma of the cake and was tempted to take a bite”

    Marble Cake

    Marble Cake is a delicious, spongy cake made by baking a blend of flour, milk, baking powder and by adding coco powder mix for marble design. Marble Cake Recipe is easy, simple and quick to make and is liked by all for its taste.

    Ingredients

    • 1 and 1/4 cup all purpose flour / maida ~170 gms
    • 3 tbsp condensed milk / milk powder
    • 2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 cup butter
    • 3/4 cup powdered sugar ~120 gms
    • 1 cup milk
    • 1 tsp vanilla essence
    • 2 tbsp cocoa powder
    • 2 tbsp hot water

    Instructions

    • Sieve maida with baking powder and baking soda at least twice and keep aside.
    • In a bowl Cream the butter and sugar till light and fluffy. Add milk and mix well until creamy.
    • Add vanilla essence, condensed milk / milk powder and give a quick stir. Then add maida, mix well to form a creamy batter.
    • Take 1/4 of the prepared batter, add coco powder and hot water, mix well and keep aside. Now your both the batters are ready.
    • Preheat oven to 170C for 10mins.
    • Meanwhile grease a baking pan(I used my bread loaf pan) with butter and flour.
    • First pour half of the vanilla batter and add half of the chocolate batter in circles. Then with a fork make marble like patterns – don't overdo.
    • Again add the remaining vanilla batter , chocolate batter in circles and make marble like patterns with a fork / knife. Can you see the swirls?
    • Now bake the cake at 170 deg C for 40-45 mins or until a fork inserted at the center of the cake comes out clean.
    • Cool down the cake for 10mins then invert.
    • Cut down into slices and enjoy Marble Cake!

    Notes

    • You can just pour whole of the vanilla batter then the chocolate batter fully and make swirls. I wanted a layered pattern so did 2 layered swirls. Also the proportion of chocolate : vanilla batter is purely your choice.
    • The cake is very soft and is not of the firm type of cake. The texture is more like the vanilla sponge cake and we totally loved it. Perfect for kids as its very soft and tender.
    • The cake rises well so make sure to pour only till 3/4 of the cake pan.
    • Make sure to cool completely before you slice them else the cake will crumble.

    Marble Cake Recipe Step by Step

    1. Sieve maida with baking powder and baking soda atleast twice and keep aside. In a bowl Cream the butter and sugar till light and fluffy. Add milk and mix well until creamy.

    2. Add vanilla essence, condensed milk / milk powder and give a quick stir. Then add maida, mix well to form a creamy batter.

    3. Take 1/4 of the prepared batter, add coco powder and hot water, mix well and keep aside. Now your both the batters are ready.

    The slices were a bit huge so I cut it down further into half while serving. The original recipe called for orange zest for extra flavour but I skipped it as I wanted a plain chocolate vanilla flavoured cake.

    Tips

      @Priya : You can skip condensed milk and add milk powder instead(as the orginal recipe says) But am doubtful on the texture when you skip both…..

      I am such a huge fan of ur step by step photos and recipes.

      I am using this recipe as a base for my cakes from 3yrs and it has never ever failed to impress.

      i've tried this with 1 1/2 cups of flour and just 1/3cup butter and believe me it is still comes out so good.

      Wow sharmi I have been awaiting for this post since the time I saw it in the upcoming post !!!
      and this is a keeper recipe. whenver I wish to bake a marble cake, this is the recipe which I often look for.
      I have tried divya's recipe very many times and u r true the cake is so soft. as her recipe says to add orange zest to the batter, that added a different taste somehow I dont like fruits in my bakes so I prefer your method

      I tried this recipe over the weekend. It turned out really soft and nice. Thanks for posting the step by step photos as well. They were very helpful.
      I think I took more than 1/4 of the mixture and added cocoa pwd to it. So, it was like i had a 1/2 and 1/2 of each mixture. And I think adding the cocoa pwd seemed to make 1/2 the mixture a little bitter as well. Next time will be more careful there.

      @Priya : Thats great to hear! Yes it should be just 1/4 cup else it will be more chocolate. And also dont add more than the mentioned amount of coco powder else it will turn bitter.Sure next time you will get it perfect 🙂

      Hi Sharmilee, i tried the recipe n it came out YUM, all ur recipes r very easy to follow due to step by step pic, thanks a lottttt for it:-)
      in fact i had asked u whether can i add slightly salted butter last post, and as u said i used there was no much difference as the sweet level was high salt level could not b noticed at all. Thanks once again:-)

      @PriyaHari : I feel adding tutti fruti is not a very good idea for this recipe as the cake is very soft and crumbly so when tutti frutti is adding while cutting sure the cake will crumble more….this is what I feel. But you can try it and see…tastewise I am sure it would be good. Do let me know once u try it 🙂

      hi sharmilee..made this cake today and it turned out so perfect..soft and moist..!!my kids loved it..!i didn't substitute the whole cup of milk with orange juice as i had asked you earlier,(didn't had the courage..i must admit..)instead added 3/4cup milk and 1/4 cup orange juice..and also i reduced the milk powder by 1 tbsp but that didn't made any difference in taste,it's just like vanilla-choco combination and moreover the texture was not at all affected.thanks a lot sharmille..!will surely let you know when i am courageous enough and try the orange-choco version.

      Well i am not a good cook , but still wanna try this cake coz looking very good. ok, in a very first step when i put the milk in creamy butter n sugar its not goot creamy batter is floating in milk huh.. dont know what to do , please advice..

        You have to keep mixing it well to form a creamy batter, it will become creamy when you beat it for 3-5mins.

      thanks for the recipe… the cake came out very tasty.. but it is a little oily and the edges are a little crisp…. Did i miss something.?. Also in the ingredients you ve mentioned hotwater but you didnt mention when it should be added.

        Guess you must have over baked for a little more time thats y the crispy edges. Oily its because of the butter. Hot water should be added with coco powder batter to form a paste, have added it now 🙂

        I have left it outside for 3 days and it was good but not sure if it last more than that.Refrigerating makes the cake harder so may be you microwave for few seconds before you serve to make it softer again.Hope this helps!

      My loaf pan is 9X3 inches so I think doubling would be fine but not very sure though…..as without seeing the pan size its a bit tough to decide 🙂

      i am very upset…i made this cake twice… once in the square pan and once in loaf pan like u …but both the times the cake didn't rise well…it was not very spongy like yours…where i must have gone wrong………..?

      @Annu: Whisk, you can get it seperately….I havent tried mixing cake batter with hand blenders so not sure…just use a spoon and mix well with no lumps….

      @Sugantha : No evaporated milk is different from condensed milk, if you want to skip condensed milk then replace it with milk powder.

      Cake turned out great….however as I was out of condensed milk..I used hung curd….which was equally great…no need to alter quantity of other ingredients.

      Hi Sharmile,
      I am new to world of cooking and baking & would like to bake this cake once..I have got a microwave so wanted to check do I need to go ahead with the same specification of pre heating it @ 170 deg for 10mins and then baking cake for 40-45 mins?
      Also tell me once the oven is pre heated should I keep the oven switch on /off?

      Yes go ahead with the same preheating time at the same temperature…..And reg the timings for baking checking 5-10mins before the actual time and then proceed as each oven differs with baking time….After preheating just keep the cake tin and set the timing…dont switch off.

        Just for variation nothing else….And this is the orginal recipe I referred for marble cake so went ahead with it as such…Yes you can use simple vanilla sponge cake recipe itself….

      Hi there .. I have this issue regarding the cocoa tasting grainy… is it the cocoa or the powdered sugar?? I felt that a low quality cocoa could be the reason for it tasting grainy…
      Also.. should the butter be salted?? Because i made it once with unsalted butter and dint quite work actually

      All in vain … My cake risen so well but after some time while baking it got flat… While inverting it into plate it was all broken into pieces…

      Do you what I did wrong for that?? how to reduce the stickiness of the cake …

        If its not cooked properly it may turn sticky…so do the toothpick test then turn off

      Thank you for the recipe, the only variation i made in it is, that i added orange rind and 1 teaspoon of orange peel to the butter and powder sugar mix and replaced the water with warm fresh orange juice.
      In the oven right now and it looks lovely!?

      Hi, I must appreciate the recipe. I tried the cake using milk powder and the cake texture turned out exactly like shown in the pics. The cake was fresh and moist even on the next day, this was so far the softest cake I ever made. Thanks a lot!! Now planning to skip the cocoa powder and vanilla essence and instead use Pineapple essence and making a three colored cake with same ingredients. A BIG THANK YOU!
