Almond Linzer Cookies is a rich cookie made by adding almond flour in regular cookie dough. This recipe has buttery texture with a slight nutty flavour and soft bite. It is a bit different from usual cookies because of almond taste and jam filling. The flavour comes mildly sweet with light crunch on the edges.

    About Almond Linzer Cookies

Almond Linzer Cookies is a variation of classic linzer cookies where almonds are added in the dough. In this recipe almonds are soaked, peeled and ground with sugar then mixed with butter and flour and the dough is chilled and rolled before cutting into shapes. This process helps to get good texture and flavour.

This cookie has texture which is soft and slightly crisp on the edges. Almonds add nutty flavour and slight bite. Jam filling gives sweetness and slight tang which balances the cookie. It also gives nice look when sandwiched together. It also stays good for few days when stored properly.

There are few variations you can try in this recipe like using different jam flavors like strawberry or mixed fruit. Some people also dust icing sugar on top for finish. You can also make plain cookies without filling and you can also try different shapes for different occasions.

I usually make Almond Linzer Cookies during festive time when I want something homemade and special. It take little effort but cookies comes out good and everyone in home like it.

    Expert Tips

    • Almond grinding - I grind the almonds with sugar to a very fine powder. If not fine the texture may become coarse.
    • Dough handling - I do not knead the dough much. Just bring together using fingers so cookies stay soft.
    • Chilling - I keep the dough in fridge before rolling. This helps in easy shaping.
    • Baking - I bake till the edges turn light golden. Do not overbake as the cookies may become hard.
    • Cooling - I allow the cookies to cool fully before adding jam. This helpa them hold the shape properly.
