Choco Chip Muffins

Choco Chip Muffins – The name itself tempts me so much…I have already tried cupcakes using butter so wanted to have a chocochip muffin with no eggs and butter and they turned out so soft and delicious. Curd as egg replacer has never let me down and this recipe is another proof for it.Do try it for yourself and treat yourself with these soft delicious goodies 🙂

Chocolate Chip Muffins Recipe

Chocolate Chip Muffins Recipe – Ingredients

Preparation Time : 10 mins | Cooking Time : 25 mins | Makes : 16 muffins

Maida(All purpose Flour) – 1 and 1/2 cups
Chocolate Chips – 1/2 cup (I used dark choco chips)
Plain yogurt(Curd) – 1 cup
Granulated Sugar – 3/4 cup
Baking soda – 1/2 tsp
Baking powder – 1 and 1/4 tsp
Cooking oil – 1/2 cup
Vanilla essence – 1 and 1/2 tsp

Method:

  1. Sieve maida twice and keep aside.Cream sugar and curd until sugar completely dissolves. Add baking powder, baking soda to the creamed mixture and mix well.Eggless Choco Chip Muffins - Step1
  2. Leave aside for 5 mins and you can see the bubbles appearing. Now add vanilla essence,cooking oil and mix well.Eggless Choco Chip Muffins - Step2
  3. Next slowly add maida in portions at a time and blend with wet ingredients. Beat well with a whisk until creamy and thick.Add choco chips and give a quick mix.Eggless Choco Chip Muffins - Step3
  4. Preheat oven to 180 deg C for 10mins. Meanwhile lay the muffin liners in the muffin pan .Spoon the batter into each muffin liner till 3/4th of the liner.Top it with few more choco chips.Bake in preheated oven at the same temperature and bake it for 20-25 mins or till a fork inserted into the muffins comes out clean. Allow the muffins to cool down in wirerack and then store or enjoy it warm 🙂Eggless Choco Chip Muffins - Step4

Serve it for breakfast or as a snack!

My Notes:

  • As my muffin liners were small I had to bake it in 2 batches, 6 in each batch so got 12 small muffins.My first batch puffed up evenmore…as I had to rest the batter till the first batch was done the second batch muffins didnt puff up so well when compared to the first batch. The pics shown in this post are from the 2nd batch.But tastewise no difference at all. But I suggest you to bake it as soon as the batter is prepared, dont let it rest.
  • Use curd at room temperature.Do not try to reduce oil and curd, I tried once to reduce oil and the cake was a great flop 😉 
  • Also after the batter is ready, dont allow the batter to sit for more than he preheating time as baking soda reacts faster. 
  • Dont be skeptical in using curd, the taste of curd is totally not shown in the cake. You can use homemade curd or use nestle curd which is very thick and works good too.
  • You can use icing sugar too, I used normal sugar only. I felt 3/4 cup of sugar was enough but the orginal recipe called for 1 cup. If you have a very sweet tooth then use 1 cup of sugar.
  • This recipe yields 12 small muffins or 6 large muffins.

    Hi…. its a winner recipe. Look good and taste lovely…super soft. I have some queries for you. Hope you dont mind. My choco chips sank to the bottom- dont know what went wrong. ofcourse , this did not spoil the taste of the cupcakes! the other thing is, if we use paper cups for the cakes, do we still need to bake them in tins or can we bake in the paper cup itself? If i want to make chocolate choco chip cupcakes, in what proportion do i add cocoa powder?
    Sorry, for so many questions.Thanks a lot

      If the choco chips sink to the bottom then next time may be mix a tsp of flour with it and then add this will avoid sinking to the bottom….If you use muffin liners(papercups) then you can bake the cake in muffin tray as I have did…Please check my choco cupcakes recipe that I have already posted…

    Hi..i tried the muffins. They turned out nice. Only one prob… the batter fitted into 15 small cup moulds..and my oven can take in only 9 at a time. What do u think i should do in future…make half the amount of batter, or first bake one batch and the the other? Making the batter two will be a bit of a hassle , hai na ?

    Hii there… Very nice n easy to make recipe. I tried it and the taste was good but the muffins became hard at the top. Also they were oily unlike the ones u have shown as pics. Can u suggest something to improve? I used d exact recipe… Thanks ya..

      If it is hard on the top may be its overbaked, try changing the rack and next time may be you can reduce the baking time by 5-7mins. Reg oil, I am not really sure as I havent found any issues as this the base recipe I am using for most of my bakes.
