    Chicken Biryani!! Yes you read it right finally here I’m with the recipe. Sundays are special not because it creates a relaxing holiday mood but during the lunch time the corridor is filled with the aroma of biryani coming from each house which kicks the hunger in me.

    About Chicken Biryani

    Chicken Biryani is a flavorful, aromatic one pot dish made by cooking chicken along with basmati rice, aromatic herbs and spices. The taste of this Chicken Biryani lingers till the next special meal!

    Each household will have their family recipe for biryani and this is from amma who makes the best biryani. I love mutton biryani more than chicken biryani and also seera samba rice is apt for biryani. I have given recipe here with basmati rice you can use other rice varieties which suits biryani too.

    Last year, a reader had asked me why I did not post for bakrid and ramzan – Trust me it did not strike me and also I did not have the courage to cook nonveg that time. Many readers asked for the chicken biryani recipe and finally here I am with it for Ramzan Special.

    Chicken Biryani Ingredients

    • Chicken – Choose country chicken or broiler chicken which would be great for this gravy. Make sure its tender and fresh.
    • Rice – Basmati Rice / long grained rice is recommended for this biryani. However alternatively you can use seeraga samba rice or sona masoori rice.
    • Ginger garlic paste – Biryani is incomplete without adding ginger garlic paste.
    • Spice Powders – I have used turmeric powder, red chili powder, garam masala powder, coriander powder.
    • Curd / Yogurt – Thick curd neutralizes the hotness of the spice powders.
    • Coconut Milk – Coconut milk elevates the taste of the biryani.
    • Masala Paste – A special masala paste is prepared using coriander leaves, mint leaves, green chilies and tomatoes.
    • Onions – Onions are sliced thin, fried to crisp and added at the final stage.
    • Tomatoes & Herbs – Tomatoes gives tanginess to the dish and are added with chopped mint leaves & coriander leaves for flavor while marinating.
    • Spices – Cinnamon, cloves, bay leaf, cardamom are seasoned in ghee / oil.

    How to make Chicken Biryani Step by Step

    1.Soak basmati rice in water for at least 20 minutes, set aside. Grind the ingredients under ‘to grind’ with little water to a fine paste. Set aside. Clean chicken and rinse it thrice , add turmeric powder and set aside.

    2.Heat oil+ghee in a pressure cooker and add the items under ‘to temper’ then add ginger garlic paste and saute for a minute. Then add onion and saute till its golden brown. Then add tomato, saute till raw smell leaves.

    3.Then add coriander mint paste and saute for 2 minutes. Then add curd, chicken along with turmeric, red chili, coriander, garam masala powders and required salt.

    4.Saute till it forms a thick gravy and chicken changes color. Add 1 cup of water and pressure cook for 3 whistles. Once pressure releases, open and give a quick stir.

    5.Drain water from rice and add it to the gravy, stir once. Then add coconut milk.

    6.Pressure cook for 3 whistles(After first whistle simmer it). Once pressure releases fluff it with a fork carefully without breaking the rice. Serve hot with onion raita.

    Thalicha and onion raita are the best combination for non veg biriyani.

    Expert Tips

    • If you like the lemon flavor, squeeze lemon juice once the biryani is done.
    • I usually use 1:1.5 cups for rice : water ratio so have given the measures accordingly. But you can use the measurement according to the variety of basmati rice you use.
    • Measure water and coconut milk accordingly.
    • This is less spicy so adjust spice level according to your taste.

    Serving and Storage

    Biryani with raita is an unbeatable combo! Onion Raita, Pineapple Raita , Cucumber Raita, Carrot Raita are some of the raita suggestions.

    Ingredients

    • 1 cup basmati rice
    • 300 gms chicken
    • 1 big onion
    • 1 small tomato
    • 2 teaspoon ginger garlic paste
    • 1 and 1/2 teaspoon garam masala powder
    • 1/2 teaspoon red chilli powder
    • 1/2 teaspoon turmeric powder
    • 2 teaspoon coriander powder
    • 1 tablespoon curd
    • 1/2 cup thick coconut milk
    • 1 cup water
    • 2 tablespoon oil
    • 1 tablespoon ghee
    • salt to taste

    To grind to a paste:

    • 1/4 cup coriander leaves
    • 1/4 cup mint leaves
    • 1 green chilies
    • 1 big tomato

    To temper:

    • 3 cloves
    • 1 cardamom
    • 1/4 inch cinnamon
    • 1 bayleaf

      Hey….my husband is a great fan of biryani, n always asked me to make it on several occasions…but I hesitated to make it thinking it is a complicated recipe…recently when I wanted to celebrate something with my Husband I thought of finally giving it a try…..while surfing I saw your recipe, n I gave it it try….n today I m really thankful to u for sharing such a wonderful recipe….my husband n I we both loved it….n now I will always be having biryani at home…thanks a ton…

      does the water u have added for cooking the chicken should be considered for the measurement of cooking rice i.e 1:1.5.

      Biriyani looks too good!!! I am new to non-veg cooking. Since my husband likes chicken, I want to make this for him. I have a question (it may look silly though :-)) can you please tell me if we can use boneless chicken for this recipe. If yes, what kind of boneless chicken should I buy?

      Thank you thank you millions for this recipe.I was able to get biryani right thank you.But I didn't grind the mint ,coriander,tomato and chilli I add it as such and I reducec the time period too but it worked fine .Thank you.

      i usually make in this way.Extra what i do is i put ginger garlic paste,mint+coriander paste during marination. but colour of my biriyani becomes toomuch deep brown.I need some of rice grains light and some deep.Plz suggest

      Tried this biryani last night…it came out so good…I skipped the coconut milk thinking it would make the biryani sweet. But even without adding it the biryani was sweet. Should i increase the chilli powder or the green chillies for good spicy biryani.

        You can try the same recipe in pan also, cook the chicken first then add it to rice….I will be posting a version in pan soon

        Keep in low medium flame while cooking, also add required ghee / oil to prevent sticking

        Just soak and cook, which will ensure nonsticky fluffy rice..Also if the masala or cocomilk is more than mentioned quantity then till give sticky biryani

      I have already asked you the measurements in grams in drumstick sambar…

      here I again asking you the measurement in grams for the basmathi rice…

      and my humble request is… hope you have the weighing machine home.. pls before posting recipes… convert your cups measurements into grams using your weighing machine.. and add the gram measurements also…

      as most of the people may not have the exact cups measurement…

      Today did this recipe… I wanted to try a different method for preparing and this one made my day. I added some more spices along with 4 you mentioned here. The taste was awesome. We just couldn't stop eating.
