To a pan add 1 tablespoon oil - add 2 medium sized potatoes cut into bite sized cubes. Saute for 2 minutes.
Cook covered until potatoes turn soft.
Check if potatoes are cooked.
Add salt to taste, ¼ teaspoon turmeric powder, 1 teaspoon red chili powder.
Give a quick mix. Sauté until well roasted. Remove to a bowl and set aside.
Rinse the pan once. Now add 2 tablespoon oil - add 1 small star anise, two ¼ inch cinnamon, 2 cloves, 1 cardamom and 1 teaspoon cumin seeds.
Let it splutter, give a quick mix then add 1 tablespoon garlic finely chopped. Saute until golden.
Add 1 medium sized onion roughly chopped, sauté until it turns transparent. Add salt to taste.
Add 1 teaspoon red chili powder, ½ teaspoon garam masala powder.
Add potatoes and give a quick mix.
Add 2 cups basmati rice along with 1 tablespoon coriander leaves.
Toss gently without breaking the rice.
Potato rice is ready!
