    Mango Coconut Milk Popsicle – a 2 ingredient mango pops quick and easy to make.I was searching for easy popsicle recipes that when I saw this idea and immediately tried it.I wanted to surprise amma on mothers day and made these, and as expected she enjoyed it! 🙂

    Mango Coconut Milk Popsicle

    Mango Coconut Milk Popsicle is a unique tasty cool bar made by freezing a blend of mango pulp, coconut milk and sugar in mold. Mango Coconut Milk Popsicle is a chill idea for managing the scorching heat and a must try at home for the joy of exploring different desserts.

    Ingredients

    • 2 nos mangoes
    • 1 cup coconut milk* (thick + thin)
    • 2 teaspoon honey

    *I used 1/2 cup thick coconut milk and 1/2 cup thin coconut milk

    Instructions

    • Rinse the mango first then cut into cubes and collect it.
    • Collect the cut mangoes in a bowl. Take your popsicle mould. Add chopped mangoes to it.
    • Take coconut milk, add honey to it mix well and keep it ready.
    • Fill mango mixture till half if the popsicle mould. Now pour coconut milk mixture to the mould till the rim of the mould.
    • Using a long stick mix it.
    • Close with lid and freeze for at least 8 hours or overnight.
    • Then while serving time, show the mould under running tap water or dip it in a bowl containing water. Carefully pull out the popsicles.
    • Serve Mango Coconut Milk Popsicle immediately.

    Notes

    • I did not add any sweetener to mango mixture as the mango was already sweet. If you prefer add sweetener of your choice.
    • I used 1/2 cup thick coconut milk and 1/2 cup thin coconut milk.
