Puttu Recipe

Puttu Kadala Curry is a Kerala’s popular traditional breakfast.I have always been associated with lot of evergreen memories with Kerala as most of our planned trips are in and around Kerala.We have always had great welcoming experience right from the accomodation search to the tourist guides each time. And everytime we make a trip to Kerala I always remind myself that I should taste the very famous combination Puttu Kadala curry but somehow I miss it.

Puttu Recipe

Before I joined my new job here, we had been to Neliyamapathy and thats where I finally tasted puttu kadala curry.So thought its time for me(us) to try it at home….amma makes puttu often but we eat with sugar and coconut but this time I made kadala curry to accompany with it. And I cudnt resist myself so clicked only few pics this time 😉 the combination is a match made in heaven!

 Kuzha Puttu Kadala Curry

Kuzha Puttu Recipe

Prep Time: 110 mins    |  Cook time: 15 mins    |  Serves: 2 

Rice Flour – 1 cup
Coconut – 1/2 cup
Sugar – 2 tbsp (optional)
Salt – as required
Water – as required to sprinkle

Method:

  1. Take the flour in a mixing bowl,add required salt to it. Start sprinkling water little by little, mix well.Keep a note that the flour should look like grated coconut or breadcrumbs.Do not add more water, it will become sticky.The right consistency is when you take the prepared flour and close it with your fist it should form a shape.Cluster Beans Usili_step1
  2. You can let it rest for 30mins-1 hr.After resting time if it becomes too dry then sprinkle little more water.Add water to the cooker and let it boil for 2mins.Fit the perforated disc correctly at the bottom of the puttu maker.Then grease the puttu maker and start filling it with the flour mixture then coconut layer alternatively till you reach the rim of the puttu maker.Now attach it the cooker and steam it for 5-7mins in low flame.Turn off heat and let is rest for 2-3mins then gently push it with a wooden laddle or the skewer such that the puttu comes out clean.Cluster Beans Usili_step2

Serve hot with kadala curry.

Puttu Kadala Curry Recipe

Kadala Curry Recipe

Prep Time: 8 hours    |  Cook time:30 mins    |  Serves: 2 | Recipe Reference : Mirch Masala

Kadala (Brown Channa) – 1 cup(soaked in water overnight atleast for 8 hours)
Shallots(Chinna Vengayam) – a handful
Tomato – 1 roughly chopped
Turmeric powder – 1/2 tsp
Red Chilli powder – 3/4 tsp
Coriander powder – 1/2 tsp
Salt – to taste

To roast and grind:

Grated Coconut – 1/2 cup
Shallots(Chinna Vengayam) – 6 cut into half
Coriander Seeds – 1 tbsp
Dried Red Chilies – 2
Cinnamon – a small piece
Cloves – 2

To temper:

Coconut Oil – 1 tsp
Mustard Seeds – 1/2 tsp
Curry leaves –few

Method:

  1. Pressure cook channa with water(till immersing level) until soft,dont drain water… keep aside.Heat a pan , dry roast all the ingredients listed under ‘to roast and grind’ till slightly golden brown.Cluster Beans Usili_step1
  2. Transfer to a mixer and grind it to a fine paste, Set aside. Heat oil in a kadai – add the items listed under ‘to temper’.Puttu Kadala Curry Recipe_step1
  3. Add shallots and fry till golden brown then add tomato and saute till mushy and raw smell leaves.Then add the coconut paste along with red chilli powder and coriander powder.Add required salt.Puttu Kadala Curry Recipe_step2
  4. Mix well , saute for 3mins then add cooked channa along with water.Allow it to boil.Puttu Kadala Curry Recipe_step3
  5. Once the curry is thick and oil starts seperating and required curry stage is reached, switch off.Puttu Kadala Curry Recipe_step4

Serve with hot puttu / appam.

My Notes:

  • Kadala curry serves as a nice sidedish for rotis, puttu, idiyapam or even aapams.
  • When I googled for kadala curry there were many sites which even suggested to add red chilli and coriander as powders but this freshly ground spice powders gives a very nice flavour.
  • If you dont have puttu maker then just sprinkle it in idli pan and steam it for 10mins
  • Adding elachi and sugar is purely optional when you have kadala curry as sidedish but I like the slight hint of sweetness in my puttu 🙂

    Just yesterday, I was telling my husband that I have a craving to taste puttu and kadala curry. Did you read my mind?? Wow, this looks amazing and you are making me yearn for it more. In my home1 (mom's place), we have banana, sugar and ghee to accompany puttu. In my home2 (inlaw's place), we have kadala curry to accompany puttu. I love it both ways. I do not have puttu maker here. So, have to wait till the next time I go home. Whenever I get the craving again, I shall visit your page here and drool… 🙂

    wow.. delighted to see my favourite recipe. My mom makes this kula puttu with kadalai and green gram curry. I love them very much . Though i have puttu maker at home, i have never tried once :(. But after seeing urs, i hv decided to make it this weekend 🙂

    its my hubs favourite Put kadala and pappadam
    but we fry coconut bits too while sauting onions.
    that too in coconut oil.
    its truly a kerala dish

    I am a big puttu fan and my mom makes pacha payaru curry with it. That's my most fav combo. Your clicks makes me grab a plate and sit with you for lunch. Its 11.45 am here and I am getting early hunger pranks because of you Sharmi!!! 🙂

    Tried this Yesterday and came out really well..my hubby loved it,,,:)Credits to you Sharmi 🙂 But I got confused with the Step(3) while making the Kadala curry as adding the ground paste given twice. Please clarify and correct me. Anyways thanks a ton to you sharmi:)

    Tried this recipe today with appam for my husband's birthday 🙂 It came out well.. Just one thing Sharmi. Tomato, red chilli powder and coriander powder are not listed under ingredients but are included in the stepwise recipe.. Thought you might want to correct that.

    hi sharmi, i tried this puttu today… but puttu is felt sticky in mouth…. i dont know were i went wrong… i cooked in idly cooker ….. 🙁 is this because of cooked n idly cooker or the water consistence in rice flour..?

      If its sticky then I think its not fully cooked…..Cook for few more mins..If you cook in idli cooker the timing may vary accordingly….

    My grandmother adds roasted jeera or jeera powder in the rice powder mix. Gives the puttu an awesome flavor.

    When filling my putting maker, should I again fold it tightly (make a mould) with my palm and then fill or just using my fingers (like sprinkling)?

      We use the same homemade rice flour for both puttu and idiyappam not sure of the store bought ones but guess it should work too
