    What is Kulukki Sarbath?

    Kulukki Sarbath is a popular drink from a Southern state named Kerala. Kulukki Sarbath is shaken lemonade. Kulukki in malayalam means ‘shaken’ so the drink gets its name from the method it is prepared.

    The name “kulukki” refers to the sound made when this drink is prepared by shaking vigorously in a cocktail shaker or a tightly sealed bottle or sealing tightly it with a glass (as it is popularly done by the street vendors). Sarbath is a sweet chilled beverage. In short it is sweet and spicy shaken lemonade.

    Kulukki Sarbath has a very unique taste made by heavily shaking a blend of lemon juice, green chilies, basil seeds, sugar syrup, salt, water and ice cubes.

    Kulukki Sarbath is commonly sold by street vendors. This drink is popular and favorite among tourists and locals. This is a refreshing drink especially during hot summer months, due to its cooling and refreshing qualities.

    Kulukki Sarbath is perfect for summer as it has basil seeds which is a natural body coolant and the drink itself is quite refreshing. This is popular among the street vendors, restaurants, hotels through out the state.

    The preparation of this Kulukki Sarbath is the specialty of the drink.This drink has a mix of sweet, salt and spicy taste served with sugar, lemon, green chili and basil seeds. Actually they don’t mix the ingredients to combine but shake it rigorously and serve it which makes the drink special.

    Kulukki Sarbath Ingredients

    • Lemon – Lemon juice is extracted and added along with few lemon slices.
    • Basil seeds – Basil seeds is also known as sabja seeds. It is bloomed first then added, it has very good natural cooling properties.
    • Green chili – Green chili is added to give spice to the drink.
    • Sugar – Sugar is dissolved in water to make a thin sugar syrup and then added to the drink.
    • Water, ice cubes – Clean sparkling water is used and ice cubes are added for serving the drink chilled.

    How to make Kulukki Sarbath Step by Step

    1.Add 1 cup water to a sauce pan along with 1 cup sugar and let it to boil. I am making in bulk to store this simple syrup in fridge.

    2.Mix it well until sugar dissolves completely.

    3.Boil for 3-5 minutes and switch off. No consistency needs to be checked.

    4.Strain using a metal strainer to remove impurities if any.

    5.Measure 1/4 cup sugar syrup and set it aside.

    6.Slice the lemon and keep it ready.

    7.Slit a green chili in the center and set it aside. Do not cut into 2 pieces, it should have a slit that is enough.

    8.Add 1/2 teaspoon basil seeds to a bowl add 1/3 cup water to it.

    9.Set aside until it blooms, takes just 5-7 minutes to bloom. Set this aside.

    10.Get all your ingredients ready. You need a shaker with lid.

    11.First add 1/4 cup prepared sugar syrup to the bottle.

    12.Add a lemon slice and green chili.

    13.Squeeze lemon juice from 1 lemon.

    14.Add 2 tablespoon bloomed basil seeds.

    15.Add a pinch of salt.

    16.Add few ice cubes.

    17.Add 1 cup water. Add little more if you find the sweetness more.

    18.Close with lid.

    19.Shake, shake shake it rigorously.

    20.Pour into serving glass.

    Add more ice cubes and serve chilled!

    Expert Tips

    • Use a tall container with lid which doesn’t leak because we need to shake it rigorously. You can use a coffee shaker too.
    • Adjust sweetness according to taste.
    • You can add chopped pineapple pieces along with finely chopped ginger etc.
    • Variations : You can make different flavors of kulukki sarbath like pineapple kulukki sarbath, orange kulukki or even rose kulukki sarbath.

    Serving & Storage

    Serve with a lemon slice and generous serving of ice cubes. Always make Kulukki Sarbath fresh and serve it. This Kulukki Sarbath is not meant to be stored so make it fresh and consume it immediately. You can make the sugar syrup and store ahead in fridge.
