    Kavuni arisi sweet recipe a popular sweet in chettinad cuisine.In olden days the chettiar community traded in many countries and Burma was one such country.It is believed that they brought back  black rice or kavuni arisi from burma as black rice is popular there.

    This black rice or kavuni arisi or kavuni puttarisi has a beautiful purple shade after its cooked as you can see.I first tasted this kavuni rice sweet at my native place Karaikudi.My aunt made this and I so loved it.So few weeks back suddenly remembered it and when I saw the pack of kavuni rice in a local supermarket immediately picked it up.This kavuni arisi sweet recipe is from my aunt.

    Black rice is very hard and takes more time to cook so prior soaking is a must.The key to get perfect kavuni arisi sweet is to cook the rice to perfection, it should be slightly mushy at the same time have a bit to bite in each grain of rice.

    Gugu loves this as much as I do.

    Kavuni Arisi

    Kavuni Arisi is a chettinad special sweet made for weddings& festive occasions. Kavuni arisi sweet is made by cooking black rise or kavuni arisi with sugar, coconut gratings & flavoured with cardamom. How to make Kavuni Arisi sweet is explained in this post with step by step pictures.

    Ingredients

    • 1 cup kavuni arisi (black rice)
    • 3 cups water
    • 1/2 cup coconut
    • 1/2 cup sugar (I used cane sugar)
    • 1/2 tsp cardamom powder
    • 2 tsp ghee

    Instructions

    • Measure the rice and soak atleast for 6 hours.
    • Drain water rinse it couple of times, then transfer to pressure cooker.
    • Add water and pressure cook for 6-8 whistles in low medium flame.when you open the rice should be like this with little water floating on top and rice should be slightly mushy but the rice should have a bit of bite .
    • Mash it slightly, add sugar and coconut.
    • Simmer and cook for 5mins in low flame.Finally add ghee.
    • Then add cardamom powder cook for 2mins then switch off. Enjoy Kavuni Arisi!

    • Usually the measure of all the 3 ingredients is the same like if we take 1 cup kavuni rice then its 1 cup sugar and 1 cup coconut.But I usually reduce it as its too much of sweet taste for us.
    • Ghee is just for flavour
    • Usually white sugar is used you can replace it with cane sugar or jaggery.I used cane sugar.
