    Millet Pulao is a tasty, spiced rice meal made by simmering millet with onion, spices and flavours. Millet Pulao mimics in taste with regular pulao & healthy too with its fibre content. Millet Pulao is a gift for people on diet and diabetics to relish guilt free.
    Millet Pulao is a mild and flavorful vegetable pulao with millets. Millet Pulao Recipe with step by step pictures. You can use any variety of millet, I have used kodo millet for this pulao.

    I wanted to try our regular recipes with millet though have tried few, this millet pulao was pending for a while finally gave it a try and it tasted as good as our regular rice pulao.I used kodo millet, you can use any millet variety but make sure to adjust water accordingly.You can check more about millets here.

    Millet Pulao | Varagu Pulao

    Millet Pulao is a tasty, spiced rice meal made by simmering millet with onion, spices and flavours. Millet Pulao mimics in taste with regular pulao & healthy too with its fibre content. Millet Pulao is a gift for people on diet and diabetics to relish guilt free.

    Ingredients

    • 1/2 cup kodo millet
    • 1 cup water
    • 1 big onion sliced
    • 1 teaspoon ginger garlic crushed
    • 1/2 cup veggies I used carrot, beans, peas
    • 1 tablespoon broken cashews
    • 2 teaspoon ghee
    • salt to taste

    To temper:

    • 2 teaspoon oil
    • 1 teaspoon ghee
    • 1/4 inch cinnamon
    • 1 no clove
    • 1 no cardamom
    • 1/2 teaspoon fennel seeds
    • 1 small bay leaf
    • 1 small star anise
    • 1 no green chilli slitted

    Instructions

    • Soak kodo millet in water for 10-15 mins max, Drain and set aside.
    • Heat oil + ghee in a pan - add the items listed under 'to temper', give a quick sauté.
    • Then add onion, crushed ginger garlic. Sauté till its golden.
    • Add mixed veggies (rinsed & drained). Sauté for 2 mins.
    • Cook covered for 5 mins in low flame. Open, give a quick sauté then add drained millet.
    • Sauté for a minute. Add water, mix it once.
    • When it starts to boil - cook covered for 8-10 mins or until the water is completely absorbed. Switch off and set aside for 10 mins. Then open and fluff it up.
    • Heat ghee in a pan - add cashews fry till golden brown. Add to pulao along with coriander leaves, mix well. Enjoy Millet Pualo!

    • For pressure cooker method use the same measures 1:1.5 ratio for rice : water. Pressure cook in medium flame for about 3 whistles. Let pressure release by itself, open and fluff it up

    How to make Millet Pulao

    1. Soak kodo millet in water for 10-15 mins max,Drain and set aside.Heat oil + ghee in a pan – add the items listed under ‘to temper’,give a quick saute.Then add onion,crushed ginger garlic.
