Homemade Crackers are thin savoury biscuits baked until crisp and crunchy. It is usually made using flour, butter, herbs and simple seasoning. The dough is simply rolled thin, cut into small squares and baked till golden. This recipe is simple and even beginners can try and bake this snacks at home.
These crackers have buttery flavour with mild spices from chilli flakes and the herbs give good aroma and makes crackers flavourful. The texture depends on how thin the dough is rolled, thin crackers become crunchy while thick crackers stays soft inside. Also pricking with fork helps the crackers bake evenly and prevents puffing.
There are few variations you can try in this recipe and you can change based on your liking. You can add garlic powder, oregano, pepper powder or cheese for extra flavour and also whole wheat flour can be used instead of maida for different texture. Some people use oil instead of butter as it gives more crispy texture after baking.
I usually make this during summer vacation time as it is easy and quick to prepare. This recipe do not need complicated ingredients and the crackers stores well too. It is a good snack option to make at home and keep for later use.

- Maida - I used maida for a smooth, soft texture. It helps the crackers turn out light
and crisp without being too heavy. Adding only maida gives that bakery-style
finish. You can use half of wheat flour and maida - Butter - Used butter for rich taste, flaky texture. and it blends with flour well and adds good flavour to the crackers.
- Mixed Herbs - Used mixed herbs for the aroma and savoury flavour and it also makes the crackers taste more flavourful and balanced.
- Chilli Flakes - Used chilli flakes for mild spicy taste and texture. It also gives nice look over the crackers after baking.
- Salt - Used salt to enhance the overall taste of the crackers. It balances the flavour properly in the dough.
- Cold Water - Used cold water for bringing the dough together smoothly. Add little by little so the dough do not become sticky.

How to make Crackers Step by Step
1.To a mixing bowl add wheat flour, then butter. I added this pizza seasoning and mixed herbs. If you don't have pizza seasoning - combine chilli flakes and mixed herbs or oregano (which comes with pizza when we buy outside) and then add it.

2.Add pizza seasoning,origano and required salt. Finally add oil.

3.Mix well until it resembles bread crumbs. Then add chill water little by little.

4.Knead to a stiff dough just like our chapati dough.Set aside for 15 minutes. Then knead again and roll over a baking sheet. Cut the edges to form a square, remove the edges. Prick with fork.

5.Cut into small squares. Lay butter paper on the tray.Arrange the crackers on butter paper and bake in preheated oven at 180 deg C for 10 - 12 minutes or until golden. Each oven may vary, you can extend baking time till 15 minutes not more than that, so keep an eye after 12 minutes. Do not over bake then the crackers will become hard.

Cool on wire rack then store in a clean dry airtight container.
