The cooked carrots have natural sweetness and yogurt gives creamy texture. It is soothing and cooling which helps to beat the heat. It is fun to alternate layers of yogurt and carrot and the colours have very inviting look.
This dessert is easy to make and has only few simple ingredients. It is usually made in summer or hot afternoons when something light and cold is needed. This recipe doesn't need special equipments, you can even use small cups as popsicle moulds.
The texture is creamy and smooth and has pops of carrot puree in each bite. It has mild sweetness and slightly tangy taste from yogurt. You can just make layers of yogurt and carrot puree to make it look pretty and fun for kids. This recipe is versatile and you can also use almond milk or coconut milk instead of dairy if want vegan version.
I usually make this on weekends when I have time and feel like having something light but special. My kids have loved it and even friends have appreciated it as healthy dessert when they visit.

Carrot Yogurt Popsicles Ingredients
- Thick curd - I have used this for creamy base, it gives smooth texture to the popsicles. You can use plain yogurt or Greek yogurt also.
- Milk - I used milk to mix with curd, it makes the popsicle soft. You can skip milk if you like it thicker or use almond milk for lighter version.
- Carrots - I peeled and cooked these till soft. They give natural sweetness and colour.
- Honey - I just added for mild sweetness. You can also use maple syrup or any sweetener you prefer.
- Vanilla essence - I have used this for aroma and flavor, it makes it taste little fancy. You can skip if not available.
How to make Carrot Yogurt Popsicles Step by Step
1.Take curd, whisk it well. I used my hand blender. Add honey.

2.Then add milk, vanilla essence, whisk it. Peel the skin form carrots, trim the edges then pressure cook it for 2-3 whistles or until soft.

3.Puree it and set aside. Take your favourite popsicle mould.

4.First add yogurt mixture then add 2 spoons of carrot mixture, alternate it.

5.Fill it up till you reach the rim.Cover with aluminium foil and freeze for 2 hours, then insert ice cream sticks. You can alternatively close with the popsicle lid too. Freeze overnight or at least for 6-8 hours. Remove the foil, show the bottom part in running tap water and then remove the popsicles carefully. Serve immediately!

Serve chilled!

- Cooking - I usually cook the carrots for 2-3 whistles till it becomes soft. This makes it easy for me to puree and mix with the yogurt.

Store leftover popsicles in freezer, cover tightly with foil or plastic wrap to avoid freezer burn. You can freeze for up to 1 week and just run under water for few seconds before serving again.

Yes you can skip if you want it very mild and natural. You can just add any sweetener of your choice instead.

It is better to cook carrots till soft. Raw carrots will make popsicles grainy and hard to blend.
