Carrot Yogurt Popsicles Recipe

Carrot Yogurt Popsicles is a creamy refreshing dessert which is perfect for hot summer. It is made using soft cooked carrots that is pureed and mixed with thick yogurt to make smooth, slightly sweet frozen treat. This popsicle has mild taste and is not very sweet, so it feels light and healthy when you eat it.

Ingredients

  • 1 cup thick curd
  • ¼ cup milk boiled and cooled
  • 2 small sized carrot
  • 1 tablespoon honey
  • ¼ teaspoon vanilla essence

Instructions

  • Take curd, whisk it well. I used my hand blender. Add honey.
  • Then add milk, vanilla essence, whisk it.
  • Peel the skin form carrots, trim the edges then pressure cook it for 2-3 whistles or until soft.
  • Puree it and set aside. Take your favourite popsicle mould.
  • First add yogurt mixture then add 2 spoons of carrot mixture, alternate it.
  • Fill it up till you reach the rim. Cover with aluminium foil and freeze for 2 hours, then insert ice cream sticks. You can alternatively close with the popsicle lid too.
  • Freeze overnight or atleast for 6-8 hours.
  • Remove the foil, show the bottom part in running tap water and then remove the popsicles carefully. Serve Carrot Yogurt Popsicles immediately!

Notes

  • Cooking – I usually cook the carrots for 2–3 whistles till it becomes soft. This makes it easy for me to puree and mix with the yogurt.
  • Layering – I add yogurt mixture and carrot puree in alternate layers. I use spoon and add slowly so the layers does not mix much.
  • Sweetness – I kept the popsicle mildly sweet in this recipe. I add honey to the yogurt mixture, you can add sugar if you prefer more sweet taste.
  • Freezing – I usually freeze the mould covered with foil for about 2 hours before inserting sticks. 
  • Removing popsicles – I run the bottom of the mould under water for few seconds before removing. This helps the popsicle come out easily.
