    Aloo Gobi is a delicious and popular curry made using cauliflower and potato. Aloo Gobi Masala pairs as a great side dish for both rice and roti.     Aloo Gobi is a curry perfect as side dish for roti and rice. I made it with slight gravy to go with rotis and rice with dal. You can even make it as a dry curry too reducing tomatoes. Cauliflower and potato absorbs the spices well and it is a great combination in curries and dry sabzis.

    About Aloo Gobi

    'Aloo' in Hindi means potato and 'Gobi' is cauliflower so Aloo Gobi is a combination of these vegetables cooked in a onion, tomato gravy along with herbs and spices. This Aloo Gobi is a perfect combination of vegetables with masala flavour.

    Aloo Gobi is a popular curry and a staple in North Indian household. It serves great with rice, pulao and roti. I love North Indian dishes and this is also one of my favourites.

    This recipe is versatile, you can make aloo gobi as dry sabzi or with gravy. Aloo Gobi is a dry sabji and Aloo Gobi Masala is with gravy. I have made it with gravy to pair with roti and rice. You can make it completely dry too and it is purely our personal preference.

    This is the easiest side dish you can make when you have both the vegetables in hand. Both the veggies are my favorite so this recipe gives a regular attendance in our routine menu.

    Aloo Gobi Ingredients

    • Cauliflower, Potato - Choose fresh cauliflower that is white in colour. Cut into small florets, soak in warm water, rock salt to get rid of worms if any. Cut potatoes into cubes as shown. Make sure both cauliflower and potatoes are even sized.
    • Tempering - Bayleaf, cinnamon, cloves and cardamom along with cumin seeds are used for tempering.
    • Onion, Tomato - Onion is added for crunch and flavour, tomatoes are used as puree to make gravy.
    • Besan flour - is added to thicken the curry.
    • Oil - You can use any cooking oil for this curry. You can use replace it with half and half of ghee and oil too.
    • Curd - adds a tangy taste and make the curry creamy.
    • Ginger garlic paste - Ginger garlic paste is added for flavour. If you don't have the you can crush ginger, garlic and use it.
    • Spice powders - Turmeric powder, red chilli powder, cumin powder, coriander powder and garam masala powders are added.
    • Kasoori methi, Coriander leaves - Kasoori methi adds a North Indian flavour to the curry and coriander leaves adds more freshness.

    How to make Aloo Gobi Step by Step

    1.Cut 1 medium sized cauliflower into small florets. Soak in warm water along with rock salt for few minutes - this is to get rid of worms if any.

    2.Rinse it well, drain and set aside. I have used 1 medium sized cauliflower along with 2 medium sized potatoes. Both should be evenly sized so that cooking will be even.

    3.Heat 1 tablespoon oil - add cauliflower and potato. Saute for few minutes first.

    4.Cook covered until it turns soft.

    5.Check if it is cooked. If should be soft but not mushy. Transfer to a bowl and set aside.

    6.Heat 1 tablespoon oil - add 1 small bayleaf, 2 cloves, 1 cardamom and one 1 inch cinnamon and ½ teaspoon cumin seeds. Let it splutter then give a quick saute.

    7.Add 1 big sized onion finely chopped saute until golden brown then add 1 and ½ teaspoon ginger garlic paste.

    8.Add 1 cup tomato puree. I used 2 medium sized tomatoes blend into a puree.

    9.Saute until raw smell leaves then add 1 tablespoon besan flour, 1 tablespoon red chilli powder, ¼ teaspoon cumin powder, ¼ teaspoon turmeric powder, ½ teaspoon coriander powder and ½ teaspoon garam masala powder.

    10.Give a quick saute.

    11.Add around 2 cups hot water.

    12.Give a quick mix. Cook covered until oil separates.

    13.Add ¼ cup beaten curd. Give a quick mix.

    14.Add cooked cauliflower and potato.

    15.Mix well and simmer for few minutes.

    16.Finally garnish with 1 teaspoon kasoori methi, 1 tablespoon coriander leaves, mix well and switch off.

    Enjoy hot with rice or roti.

    Expert Tips

    • Vegetables - Cut both cauliflower and potato into even sized pieces so that they cook evenly.
    • Cooking vegetables - Cook both the vegetables soft but do not make it mushy.
    • Cooking masala - Cook onion tomato masala well until raw smell leaves then add the spice powders. Adding hot water helps to cook faster and avoids burning of the spice powders.
    • Adding curd - Beat curd well until smooth then add it else there are chances for the curry to curdle.
    • Spices - Add spice powders balanced else it will overpower the natural taste of the vegetables.
    • Consistency - You can make it dry or gravy as per your liking.
    • Finish - Finally add crushed kasoori methi and coriander leaves for the best flavor.

    Serving and Storage

    Aloo Gobi can be served with rice, roti, pulao, nan etc. This curry keeps well in fridge for 2 days, reheat and serve it.

    FAQS

    1.Can I make this dish dry instead of gravy?

    Yes. Just reduce tomato puree and water. Cook until the vegetables are coated well with the masala and becomes dry.

    2. What can I serve with Aloo Gobi Masala?

    It pairs well with roti, naan, paratha, or steamed rice.

    3.Can I add other vegetables to this dish?

    Yes, you can add vegetables like peas, carrots, corn, baby corn . You can even add soya, paneer etc.

    4.Can I prepare it ahead of time?

    Yes, it can be prepared a few hours earlier. The flavours blend well when more resting time is given.

    5.How can I make the dish spicier?

    You can increase the amount of red chilli powder or add chopped green chilies while cooking.

    Ingredients

    • 1 tablespoon oil (to cook the veggies)

      My fav and always love to have with rotis.But now a days stopped having as my frnd told tht they're putting lots of slow poison during the cultivation to avoid worms.So not hvng now but after looking at your's feel like having now.

      @Mitha : Sure will post it 2mrw...Its close to SKS mysore pak but the ghee doesnt ooze out like in SKS version...but am on the lookout for the recipe, will post that version too soon 🙂
