The main challenge we face while packing lunchbox for kids is to satisfy kids demands else the lunchbox returns right back untouched…But at the same time make sure we are ontrack to include healthy items too atleast hidden……Waiting to see the lunchboxes empty is every mothers wish….though it doesnt seem to happen everyday, the distant dream remains the same…and now thats a everyday battle between kids and mothers….:)

Here is the lunch box menu for today:
- You can make the spice powder for peanut rice the before night itself and refrigerate it. As we are roasting coconut well, it will not get spoiled easily.
- Grate carrot and store it in clean containers and refrigerate it.
- In the morning just make rice, mix with the peanut spice powder and temper it…your peanut rice is ready.Then carrot poriyal gets done in just few mins , meanwhile you can fry the vadams.
