Murungai Keerai Soup is a traditional style soup made in many South Indian homes and this recipe has simple preparation. Drumstick leaves are cooked with garlic, onion and tomato and then it is simmered with water. It is easy to make and gives good flavour when cooked well.
The texture of this soup is slightly thin and has mild taste. Drumstick leaves give main flavour and also makes the soup healthy. Garlic adds strong flavour and onion gives sweetness and tomato adds tang which balances the taste. You can have this soup warm for better taste.
There are few variations you can try in this recipe and you can adjust as per your liking. You can add pepper for spice and you can also add coconut milk for more richness. Some people also add dal water and it makes the soup more filling You can adjust the thickness as per your liking.
I usually make when I want healthy simple soup at home. It is easy to prepare and everyone in home drink it warm.

- Drumstick Leaves - I added drumstick leaves for flavor and it makes the soup healthy and you can use tender leaves for better taste.
- Jeera - I added for tempering in this recipe. It gives light aroma and helps in digestion.
- Garlic - I used crushed garlic for strong flavor, taste and also gives slight heat to the soup. You can adjust the quantity as per taste.
- Onion - I added sliced small onions in this soup. It gives slight sweetness and balances the flavor. You can use regular onion also.
- Tomato - I used chopped tomato for little tanginess and gives mild sour taste and improves the overall flavor.
- Oil - I just used for sauteing the ingredients. You can use any cooking oil.

How to make Murungai Keerai Soup Step by Step
- Pluck the drumstick leaves from the stem and set aside. If the leaves are tender then the tiny stems can be added too. Rinse it well twice and drain water.Set aside.

2. Heat oil in a pan - add jeera let it crackle, add crushed garlic.

3. Saute for a minute, then add onion and required salt.

4.Saute till golden then add tomato, saute till tomatoes turn mushy and raw smell leaves.

5.Now add cleaned drumstick leaves. Saute for 2 to 3 minutes until the raw smell leaves. I transferred the mixture to a sauce pan.

6.Add water and let it boil for a good 5 minutes.

7. When its boiling add little more salt(if needed) and pepper. Cook for a minute and switch off.

8.Serve hot with a sprinkle of pepper powder!

- Cleaning leaves - I clean the leaves well and remove the thick stems. Tender stems can be used and it cooks well.
- Sauteing - I sauté the onion and garlic till it turn light golden. This helps remove raw smell and gives good flavor.
- Cooking leaves - I cook the leaves for few minutes till raw smell goes. Do not overcook as it may change the taste and color.
- Boiling - I let the soup boil for few minutes so the flavors combine well. This give better taste to the soup.
- Variation - You can add coconut milk or dal water for different taste. It makes the soup more rich and filling.
Serving and Storage
Serve Murungai Keerai Soup hot as light meal or starter. This goes well when you want something warm and healthy. It is best to consume fresh. I don't recommend storing this but you can keep it for upto 12-24 hours in fridge and reheat before consuming.

You can grind but it may give slight bitter taste. I prefer making it without grinding.

Yes you can filter and give only the soup part. It will be easy to consume.
