Coconut Rice and Potato Curry – Kids Lunch Box Recipes Idea 15

Coconut Rice & Potato Curry

Coconut Rice, Potato Curry and Papad is the lunch box menu for this week. As a kid I didnt like coconut rice but if thesidedish was potato fry/curry or seppenkizhangu varuval I wouldn’t complain. Though pulaos and fried rice are kids favorite, we should try to include variety rice too for them atleast once in a while.

It took some time for me to get the perfect coconut rice as I always feel however I try, I dont get it like ammas thengai sadam…..the reason was I over/under saute coconut and that makes the taste differ…but now I can confidently say I’ve been graduated ๐Ÿ™‚

Two days back ie on tuesday I planned this menu coconut rice with small potato fry and clicked, I was very satisfied with the setup and color combo…But while clicking itself I had a strong feeling that the rice was not getting focused…After spending almost an hour and a half clicking small potato fry for new post and the lunch box menu pics, I sat down to transfer the pics from camera to PC…I was shocked to see the pics, edited and it even more upset ed me….I wasn’t satisfied at all.It almost panicked me and I was skeptical whether the camera had any issues… I atonce trashed the entire set of pics..:( Oh no how can I post the lunch box series with a set of pics which isnt satisfying me..Yes I love planning and clicking the lunch box series, it is sure special and makes me content after posting each menu….kind of self satisfaction ๐Ÿ™‚ So what did I do?! I made the same menu(except that I had to skip small potato as I didnt have it) kept in the same setup and clicked it again yesterday….I know,crazy me ๐Ÿ™‚  Aha 3 paras of intro already now let me not bore you more..lets move to the lunch box menu today ๐Ÿ™‚

My Notes:

  • Crush the papad and pack it separately.Don’t add it along with rice as it will become soggy. I just clicked it for pic sake. ๐Ÿ™‚
  • As its for kids you can temper fully in ghee itself and finally drizzle coconut oil for flavour.
  • Saute coconut well to avoid spoiling soon.
  • You can even add peanuts and chana dal like we do for lemon rice.

    Coconut to be added is dry coconut or fresh coconut
