    Almond Muffins are rich, spongy soft cakes made blending wheat flour, eggs, butter and powdered almonds to a batter and baking it after garnishing with chopped almonds. Almond Muffins are a delight for special occasions & Christmas and a must try at home for the joy of baking.

    Whole Wheat Almond Muffins is a quick and easy to bake muffins.I recently bought this almond essence and almond flakes so wanted to try more of almond recipes. So you can expect more of such recipe in the coming days too.

    Talking about the muffins, these are very soft with a slightly crusty top. How else can I treat my boy who woke up crying for muffins early morning and it was surprise for him when he was back from school. When I search for baking recipes, I start googling then with all my constraints I finally end up tweaking an old recipe from my website itself.

    Almond Muffins | Whole Wheat Almond Muffins

    Almond Muffins are rich, spongy soft cakes made blending wheat flour, eggs, butter and powdered almonds to a batter and baking it after garnishing with chopped almonds. Almond Muffins are a delight for special occasions & Christmas and a must try at home for the joy of baking.

    Ingredients

    • 3/4 cup wheat flour
    • 1/4 cup almond powder
    • 1/4 teaspoon baking soda
    • a pinch salt
    • 1/2 cup brown sugar
    • 1/4 cup butter
    • 1 no egg
    • 1/2 cup milk
    • 1/8 teaspoon sweet almond essence replace with vanilla essence if you don't have it

    Instructions

    • To a mixing bowl add wheat flour, powdered almonds along with baking powder and salt. Mix well and set aside.
    • To another mixing bowl add butter and sugar.
    • Whisk well so that its creamy. Now add an egg. Mix well.
    • Add little wheat flour then little milk. Alternate and add it.
    • Add almond essence. Mix well to for a smooth creamy lump free batter. Using a ice cream scoop, scoop the batter.
    • Line muffin liners on the mold, fill it with batter until 3/4th of the liner.
    • Preheat oven at 180 deg C for 10 mins.
    • Sprinkle chopped almonds on top. Bake for 15-20 mins or until the top turns golden.
    • Enjoy Almond Muffins!

    Almond Muffins Recipe Step by Step

      Hi this looks absolutely delicious.. I don’t have a muffin tray though .. Can I make it as a cake. If so can you tell me the settings

        Yes you can make it as a cake.Same settings but timing alone increase it to 5-8 mins extra
