I have already posted chapathi noodles recipe long back and I can say this is an improvised version after watching a TV show.I like this idea of making it exactly indo chinese style and kids loved it so much.

Also I tried this recipe using my new Meyer kadai/wok and it was so convenient and you can even check for yourself in the video how effortlessly the noodles gets cooked without sticking.I have always wanted to try this brand and finally it happened.I always try a few dishes in new cookwares before starting to use them in my videos to know the knack of cooking in it…And am so glad that this did pass through all of my experiments so far. I love the look of it, the glass lids are a add on and am sure this is a great addition to my cookware collections in my kitchen.

How many of you know even a steel cookware needs proper seasoning before first use? I came to know this only few years back so do this as a custom these days :

How to season steel cookware ?

Rinse well, wipe with a dry cloth then heat the pan with few drops of oil drizzled all over the pan, heat in low flame until it starts to smoke..Switch off now the pan is seasoned and you can start to use it.This seasoning is recommended before first use but you can do this whenever you feel it starts to stick.

About my new Meyer kadai:

Variations:

  • You can add vegetables of your choice but make sure you add vegetables which cooks easily.
  • You can use mushroom,cooked corn etc.
  • You can use leftover chapathi / phulka or even roti.
  • I used homemade,you can use homemade / store bought readymade chapathi too.

Chapathi noodles recipe

Chapathi noodles recipe a quick snack or breakfast with leftover chapathi

Ingredients

  • 5 nos leftover chapathi
  • 1 tbsp oil
  • 1 tbsp garlic finely chopped
  • 1 tbsp spring onion green finely chopped
  • 1/2 tbsp spring onion white
  • 1/2 cup onion sliced thin
  • 1/2 cup cabbage sliced thin
  • 1/4 cup carrot chopped thin lengthwise
  • 1/2 cup capsicum chopped thin lengthwise
  • 1/2 tsp soya sauce
  • 1 tsp red chilli sauce
  • 1 tsp green chilli sauce
  • 1 tsp crushed pepper
  • salt to taste

Instructions

  • Take a chapathi roll over then cut into thin strips.
  • You can use a knife or kitchen scissors to cut into thin strips.Repeat to finish.Now to a kadai heat oil - add garlic and spring onion white part, let it cook for a minute.
  • Then add onion saute until transparent then add carrot,cabbage,capsicum.Saute for a minute.
  • Cook covered for a minute.Open add soya suace,red chilli sauce,green chilli sauce.Saute in high flame for a minute.
  • Add chapathi, mix well.Finally add crushed pepper,spring onion green part toss well and switch off.

Notes

  • Cooking covered is optional, if you want more crunchy vegetables then just saute and proceed.I usually cook covered for a min to make veggies a bit softer suitable for kids.
  • Sauces I had so added,but you can skip the sauces if you want.But I would suggest to add soya sauce and tomato sauce(ketchup) atleast to get the chinese flavour.
  • Add crushed pepper for more flavour, I used my pepper mill to crush and add.
  • Do not skip spring onion, it gives a nice flavour to the noodles.I used homegrwon spring onion which amma planted.
  • Make sure its not too dry, add sauces and oil accordingly.

How to make vegetable chapathi noodles recipe:

  1. Take a chapathi roll over then cut into thin strips.
  2. You can use a knife or kitchen scissors to cut into thin strips.Repeat to finish.Now to a kadai heat oil – add garlic and spring onion white part, let it cook for a minute.
  3. Then add onion saute until transparent then add carrot,cabbage,capsicum.Saute for a minute.
  4. Cook covered for a minute.Open add soya suace,red chilli sauce,green chilli sauce.Saute in high flame for a minute.
  5. Add chapathi, mix well.Finally add crushed pepper,spring onion green part toss well and switch off.
  6. Serve hot!

My tips while making chapathi noodles:

    no one will believe it is chapati noodles until they read the title of post. pics look like original Chinese noodles
