    Ugadi Pachadi is one of the most important dish prepared on the day of Ugadi to offer god as neiveidyam.

    Ugadi Pachadi is a mix of 6 ingredients which signifies life with a mix of all 6 emotions. Ugadi Pachadi is a festive food which is a combination of all 6 flavours / emotions of life.

    1. Raw mango – tangy – surprise
    2. Tamarind – sour – disgust
    3. Neem flower – bitter – sadness
    4. Jaggery – sweet – happiness
    5. Pepper – spicy – anger
    6. Salt – salty – fear

    Ugadi Festival

    Ugadi is the New Year’s Day for the Hindus of Andhra Pradesh, Karnataka and Telangana state in India also called as Telugu new year day. The first day of the nine-day festival is celebrated as Ugadi to mark the beginning of the creation of mankind by Lord Brahma.

    This festival is known by different names in different states like they call Gudi Padwa in Maharashtra and Ugadi in Andhra Pradesh and Karnataka. Ugadi or Yugadi is also known as Samvatsarādi.

    Ugadi Pachadi Ingredients

    • Raw mango – Use small cubes raw mango pieces. I peeled the skin and used ut you can use it with skin also.
    • Tamarind – Tamarind gives a slight sourness to the pachadi.
    • Neem flower – Neem flower is must have in this pachadi and gives a slight bitter taste to this pachadi.
    • Jaggery – Jaggery gives a sweet taste. You can either use powdered jaggery or the cube jaggery in that case crush and add it.
    • Pepper – Pepper powder gives a mild spice to this pachadi. Use freshly ground pepper powder which is best.
    • Salt – Salt is added to taste.

    Ingredients

    • 1 cup water
    • 1 small lemon sized tamarind
    • 1 tablespoon chopped raw mango
    • 1 tablespoon neem flower
    • 1 tablespoon powdered jaggery
    • 1/4 teaspoon pepper powder
    • salt to taste

    Instructions

    • Rinse the mango,trim the edges peel off the skin and chop into small cubes and set aside.
    • Take tamarind in a bowl,add 1/2 cup water to it.Squeeze and extract juice from it.Discard the fiber part.
    • Add remaining 1/2 cup water to it.Then add powdered jaggery to it.
    • Mix well with a spoon.Now add chopped raw mango pieces.
    • Add neem flower to it,then required salt.
    • Finally add pepper powder and give a quick stir. Ugadi Pachadi ready!

    Ugadi Pachadi Recipe Step by Step

    1.Take 1 small lemon sized tamarind in a bowl, add 1/2 cup water to it.

    2.Squeeze and extract juice from it. Discard the fiber part.

    3.Strain tamarind extract, discard the remains.

    4.Add strained tamarind extract to a bowl.

    5.Add remaining 1/2 cup water to it.

    6.Then add powdered jaggery to it.

    7.Mix well with a spoon.

    8.Add salt to it.

    9.Add 1/4 teaspoon pepper powder to it. Mix it well.

    10.Rinse the mango,trim the edges peel off the skin and chop into small cubes. Add 1 tablespoon chopped mango pieces and add 1 tablespoon neem flower to it.

    11.Mix it well.

    Expert Tips

    • You can use jaggery syrup instead of powdered jaggery too.
    • Make sure to plus or minus ingredients and make a balance of the ingredients used.
    • The ingredients given here are for the traditional Ugadi Pachadi Recipe, but incase if you want replacements you can check variations section.

    Variations

    • Most probably neem flower is easily available throughout the year but just incase if you do not get it then roast 1/4 teaspoon methi seeds and replace it with neem flower to get the same bitter taste.
    • Instead of jaggery you can use cane sugar too.
    • If you do not get raw mango you can add raw mango powder too.

    Serving & Storage Suggestion

    Ugadi Pachad iis served as a neiveidyam to offer after pooja so I recommend to make it fresh and serve. You can make and consume it the same day but do not recommend storing for later use.
