Yam fry recipe, Senaikizhangu varuval recipe – A spicy fry that goes well with even with rice and curd.

Attimes weekday lunches are boring to cook and last week was one such day when I was just in no mood to cook at all. To add it on, I opened the fridge to realise just 1 radish and a week old yam was lying which was left after making the kalan recipe. So I cooked sambar and put up all my fav ingredients to make this fry and voila we completely loved this. So I wanted to record it in my space so I made the same curry again to click and post it here 🙂

Yam fry recipe

Senaikizhangu varuval, yam fry with freshly ground spice mixture.
Prep Time10 mins
Cook Time20 mins
Total Time30 mins

Ingredients

  • 1 cup senaikilangu (Yam) chopped
  • 1/4 tsp garam masala powder
  • water as needed
  • salt to taste

To roast and grind:

  • 1 tbsp coriander seeds
  • 1 tsp fennel seeds
  • 2 cloves garlic
  • 2 small dried red chillies

To temper:

  • 1 tbsp oil
  • 1/2 tsp mustard seeds
  • a small sprig of curry leaves

Instructions

  • Dry roast the ingredients listed under ' to roast and grind' until browned and aroma comes.Transfer to mixer jar.
  • Grind to a coarse mixture,Set aside.Cut yam into bite sized squares and wash well to get rid of the mud smell. 
  • Then cook it along with turmeric powder until soft yet crunchy enough to bite.
  • Now add the spice mixture along with garam masala powder and marinate,keep aside for 15mins.Heat oil in a pan - add the items listed under 'to temper' let it splutter.
  • Add marinated yam and roast until golden brown.Add salt if needed. It will take atleast 10mins in low flame o get roasted well.Switch off.

Notes

  • You can make it more masala/gravy kind by adding little water.
  • This recipe works good even for potato and raw banana too.
  • While cooking yam make sure not to mush it up.

Serve hot with rice and curry.

    hey I made this..but mine got really soft, may be because I gave 3 whistles to the cooker…and I had a massive allergy while cutting the yam…but the recipe is good…thnks I wish to become your neighbour

    You can judge it by seeing the cut pieces, its slightly dark then its older one.If you see it fresh then keep for 3-4 days then use it to avoid itching.

    hi sharmi.. can u please tell me the best way to cook yam properly in the pressure cooker?… the yam either cooks and becomes too soft or is too hard .. thanks

      If you are pressure cooking you have to be careful, I cooked covered so that its easy to check whether its done or not

    You can oil your hands while cutting yam then it won’t itch also boil it in Salt water to remove itchiness on tongue
