Poori Recipe

Poori recipe with step by step photos.Tips to get perfect fluffy poori recipe.
Poori or Puri is a kind of flat bread which is made with whole wheat flour and deep fried.Poori is my favorite especially Poori masala…who doesnt ?! Poori masala is one of the popular dishes in most hotels. But we make it very rarely as its deep fried but make mini pooris for mittu whenever we make chapathis as she likes poori than chapathi.
It was really a tough time clicking the pooris puffed up but guess have done justice to it. Though my fav combination is poori with chana orc hole masala , hubby likes poori masala.

Poori Recipe

Crisp and fluffy pooris ready!

Poori Recipe

Poori Recipe – Ingredients

Preparation Time : 10 mins | Cooking Time : 15 mins | Makes: 10 pooris
Recipe Category: Baby Food | Recipe Cuisine: Indian

Wheat Flour – 1 cups
Fine white Rava – 1/2 tsp(optional)
Salt – as required
Warm Water – 1/4 cup(adjust accordingly)
Oil – to deep fry

Method:

  1. In a bowl add wheat flour, rava(soaked in water for 10mins) and salt together  and mix well to combine.Add water little by little to gather to form a stiff dough..first it will have cracks. Leave aside for 15-20 mins. Then knead again to form a smooth dough.
How to make Poori Recipe - Step1
  2. Seperate into equal lemon sized balls(or slightly smaller).Take a ball and roll it out with rolling pins making sure the thickness is even.Dont roll it very thin like we do for rotis/chaapthis , it should a bit thicker
How to make Poori Recipe - Step2
  3. Heat oil, carefully drop the pooris one after another(depends on your kadai size too).Once it is completely immersed in oil press gently with your spatula in the middle, continue pressing until the poori puffs up on all sides.Turn the other side, once it turns golden brown, take and drain.
How to make Poori Recipe - Step3

Serve hot fluffy pooris with aloo masala  / chole masala!

Poori Recipe

My Notes:

  • Make sure the kadai is filled with oil enough for the pooris to immerse. Also oil should be hot for the puris to puff nicely. May be pinch a small piece and drop it in oil to check, it it raises immediately the oil is hot enough else heat the oil for  few more mins.
  • Also adding rava to the wheat flour gives nice crisp pooris like in hotels.
  • Adjust the flame to medium high for the oil to heat up first then lower the flame to medium.

You can sprinkle dry gram flour itself so that it does not form lumps…Alternatively you can mix with water and also add. Hope this helps!

@Rekha : We usually make poori with wheat flour only. Only for maida poori(channa batura) we add maida. I havent tried half and half with it…but guess it will turn out good only.

One tip for pooris is to remain fluffed for longer is to add half a tsp sugar along with salt (to taste).
