Vella Aval is a traditional mild sweet dish made by blending aval with jaggery syrup & flavoured with nuts. Vella Aval is a healthy snack compared to the packed foods and quick to make.
Vella Aval the name says it all…there is nothing fancy about this recipe just called by different names sweet aval or aval jaggery or sweet poha or aval nanachathu etc. Poha is very versatile and quick to make, check for more poha recipes here. You can make this for a quick neiveidhyam on fridays.

Vella Aval
Ingredients
- 1 cup aval / poha preferably thick poha
- 3/4 cup jaggery
- 2 teaspoon ghee
- 1/4 teaspoon cardamom powder
- 2 tablespoon coconut
- 5 cashews broken
Instructions
- Soak jaggery in warm water (till immersing level) , crush it well.
- Then heat it up until it is slightly thick (no string consistency needs to be checked) It should be of idli batter consistency. Strain and keep aside.
- Roast the broken cashews in ghee till golden brown and set aside.
- Rinse poha well then soak it in water for 2-3mins till it becomes soft.
- Add poha to the jaggery syrup in a pan.
- Mix well until its coated evenly. Add grated coconut and cardamom powder, ghee and give a quick mix. Add roasted cashews and serve.
- Serve Vella Aval with a dollop of ghee…yumm!!

Tried this recipe this weekend and it came out superb. We had after a day of fasting, along with sabudana khichdi, sauteed sprouts, and fried iddly (a feast!).
