Vella Aval

Vella Aval is a traditional mild sweet dish made by blending aval with jaggery syrup & flavoured with nuts. Vella Aval is a healthy snack compared to the packed foods and quick to make.

Ingredients

  • 1 cup aval / poha preferably thick poha
  • 3/4 cup jaggery
  • 2 teaspoon ghee
  • 1/4 teaspoon cardamom powder
  • 2 tablespoon coconut
  • 5 cashews broken

Instructions

  • Soak jaggery in warm water (till immersing level) , crush it well.
  • Then heat it up until it is slightly thick (no string consistency needs to be checked) It should be of idli batter consistency. Strain and keep aside.
  • Roast the broken cashews in ghee till golden brown and set aside.
  • Rinse poha well then soak it in water for 2-3mins till it becomes soft.
  • Add poha to the jaggery syrup in a pan.
  • Mix well until its coated evenly. Add grated coconut and cardamom powder, ghee and give a quick mix. Add roasted cashews and serve.
  • Serve Vella Aval with a dollop of ghee…yumm!!
