    Pearl Millet Shortbread Cookies are crispy, tasty biscuits made by flat rolling a dough blend of pearl millet flour, excessive butter, sugar & flavour, cutting into squares and baking it. Pearl Millet Shortbread Cookies are healthy snacks to make for Christmas and evening snacks.

    Pearl Millet Shortbread Cookies is a soft buttery cookie made with bajra or pearl millet flour.These cookies needs no rising agents still comes out so well perfect for kids.Trust me these cookies turned out above my expectation as I made it with what I had in my pantry but still it turned out super.

    Both mittu and gugu loved it soo much that they wanted me to reserve a few for the snack box too and I promptly did it too.

    And the mini mickey rolling pin is from my best friend Sowmya and I am loving it so much.Isnt it cute?!

    Pearl Millet Shortbread Cookies

    Pearl Millet Shortbread Cookies are crispy, tasty biscuits made by flat rolling a dough blend of pearl millet flour, excessive butter, sugar & flavour, cutting into squares and baking it. Pearl Millet Shortbread Cookies are healthy snacks to make for Christmas and evening snacks.

    Ingredients

    • 3/4 cup bajra flour
    • 1/4 cup wheat flour
    • 1/2 cup cane sugar
    • 1/4 cup melted butter
    • 1/4 teaspoon cardamom powder
    • 3 to 4 tablespoon milk

    Instructions

    • To a mixing bowl add bajra flour, wheat flour, cardamom powder, sugar and salt. Mix this well first then add melted butter.
    • Mix well to form crumbly. Add milk little by little to form a tight dough like shown below.
    • Place a butter paper on the dough and start rolling. Roll it slightly thin to 1/4inch thickness. Using a cookie cutter cut into desired shapes. C
    • ollect the extras, gather to a dough then start rolling again.
    • Repeat to finish dough. Prick with a toothpick.
    • Bake in preheated oven at 180 deg C for 8-10 mins or until the edges starts to turn golden brown. Cool down then store.
    • Store Pearl Millet Shortbread Cookies in a clean dry airtight container.

    • You can use homemade or store bought flour too.
    • If you want to use regular white sugar you can use it in powdered form.1/2 cup would be perfect but if you want mild sweetness then use 1/3 cup sugar.

    How to make Pearl Millet Shortbread Cookies

      For the millet shortbread cookies do you need the wheat if you need to go wheat free? Substitutions??

        You can replace wheat flour with either white flour or almond flour.
