    Lemon Squash Recipe with just 3 main ingredients easy to make in under 30 minutes. My grandmother used to make this squash every summers and I so so love it. Last week got the recipe from amma who had written it in her handbook and made this lemonade syrup – Its quick, easy and the best thirst quencher during summers.

    What is Lemon Squash?

    A squash is a non-alcoholic concentrated sweetened syrup. We can make many fruit squashes and the most popular one is this Lemon squash made using fresh lemon. Usually squash is made using fruit juice, water and sugar.

    Lemon Squash is a lemon syrup made boiling sugar with water until reduced, thick and syrupy consistency finally after cooling down adding lemon juice to it. This lemon squash can stored in fridge for months and instant lemonade can be prepared any time.

    This homemade lemon squash is free from additives and preservatives. Lemon juice and sugar are excellent natural preservatives so need for any chemical ones. This DIY sweetened lemon concentrate can be very helpful to make glasses of lemonade in few minutes instantly.

    This lemon juice made with lemon squash tastes way better than the juice we make with just water, sugar and lemon juice. As lemon squash is more concentrated the taste is so good.

    Lemon Squash Ingredients

    • Lemon – Use fresh juicy lemon.
    • Sugar – White granulated sugar is used. You can try with jaggery or brown sugar too.
    • Water – Use clean water to use it along with sugar for boiling.

    How to make Lemon Squash Step by Step

    Preparing lemon syrup

    1.Use fresh lemons. Cut into half first then squeeze it using a lemon squeezer. Extract the juice, discard the seeds. Measure 1/2 cup lemon juice and collect the juice in a bowl and set aside.

    2.To a sauce pan add 1 cup sugar.

    3.Add 1 cup water to it.

    4.Stir it well for the sugar to dissolve and let it to boil.

    5.Let it boil until it reduces and starts to turn sticky. Stir very now and then. The syrup will start bubbling.

    6.Add 1/4 teaspoon cardamom powder if you wish to add at this stage.

    7.Allow it to boil. Carefully take the syrup and touch it between your fingers like this. The syrup with form half string but will break – this is half string consistency.

    8.Once half string consistency is reached, Switch off and cool down completely.

    9.Add the syrup to a fine holed strainer and strain it. You can even use a muslin cloth to strain. This is to remove impurities in sugar if any.

    10.Add extracted 1/2 cup lemon juice to it. Add lemon juice only after the sugar syrup is cooled.

    11.Mix it well.

    12.Store in a clean dry jar, preferable glass. Keeps well in room temperature itself for 3 days after that refrigerate and use it.

    To prepare lemon juice

    13.Pour 2 tablespoon syrup in a glass.

    14.Add 1 cup water to it adjust according to the sweetness you prefer. Add more syrup if you like.

    15.Add few ice cubes and mix it well with a spoon. Lemon juice is ready!

    Expert Tips

    • Don’t squeeze lemon very hard and take the juice as it will give a bitter taste.
    • Always mix lemon juice only after the sugar syrup cools down.
    • You can use fine strainer or even a muslin cloth to strain.
    • You can even use crushed saffron for a nice flavor and beautiful color it gives to the drink.
    • You can add soaked sabja seeds to lemonade.
    • You can skip cardamom powder and make it plain too, that’s how my grandmother used to make.
    • Store in a sterilized glass bottle with tight lid for more shelf life.
    • Add ice cubes and serve the lemonade chilled.

    Serving & Storage

    Serve Lemon squash mixed with water and ice cubes.Keeps well in room temperature for 3-5 days but for more than a month when refrigerated. No need to freeze it.

    FAQS

    1.How to sterilize glass bottle?

    Boil water in a pan big enough to hold the glass jar. Place the glass jar into boiling water, you can even add the lid if its not made of plastic. Let it boil for 10 minutes. Use tongs to remove them, dry it completely and use it.

    2.Is lemon squash same as lemon juice?

    No lemon squash is made by reducing water, sugar to a thick consistency then mixing lemon juice with it. This increases shelf life. Lemon juice is made using just mixing water, sugar and extracted lemon juice.

    3.What is the difference between lemonade and lemon squash?

    Lemonade refers to any lemon flavored drink wither carbonated or fresh juice. Lemon squash is a concentrate used to prepare lemonade.

      Yum,my favorite drink for summer!We add dry ginger and cardamom to the sugar syrup and then strain it before adding the lemon juice,gives a nice punch to the lemonade:)

      Great recipe! The sugar and lime juice definitely act as natural preservatives but shouldn't I add just a little citric acid, just in case?
