    Carrot Soup is a comforting & soothing soup that can be enjoyed as an starter or main course. Carrot Soup is healthy and is relished by even kids who do not like soup in their meal. Carrot Soup covers the vitamin A requirements of the body for the day. Let us learn to make Carrot Soup with step by step pictures and video.

    Amma makes carrot soup often especially during the cold winters. I love tomato soup , sweet corn soup the best of all soups creamy and yummy now this carrot soup has topped the list too. I tried this soup for my daughter and she liked it very much, she is a fussy eater when it comes to vegetables just like her mother so have to sneak in carrots in the form of soups or kheer.

    About Carrot Soup

    Carrot Soup is made by cooking carrots along with spices, herbs, onion then grinding it to a puree, simmering it until a creamy consistency and finally garnishing it with herbs and spices.

    This easy one pot Carrot Soup Recipe is healthy and tastes soo good. You can serve it with croutons or french bread or just toasted bread. This soup is vegan minus the butter but you can replace it with oil. Similar to my Carrot Tomato Soup which is one of the popular recipes here this soup is also rich and flavourful.

    I have not added milk or cream here but feel free to add it if you like it extra rich and creamy. I have made this soup to suit kids and elders an everyday soup kind so made it simple.

    This silky smooth creamy soup is so rich even without the addition of cream and tastes so delicious. You can make Cream of Carrot Soup by adding fresh cream may be 1/2 cup. Soup with bread makes it a comforting combo do try and enjoy!

    Not being a soup person I love this soup for its slight sweetness from the carrots with a hint of hotness from the pepper yumm soup perfect for this chilly weather now in Coimbatore.

    Carrot Soup

    Ingredients

    • 3 cups carrots chopped roughly
    • 1 tablespoon butter
    • 1 tablespoon oil
    • 1/2 teaspoon cumin seeds
    • 4 cloves garlic halved
    • 1 medium sized onion chopped roughly
    • 2 cups water
    • 1/2 teaspoon pepper powder
    • 1/4 teaspoon paprika powder or red chilli powder
    • 1/2 teaspoon oregano
    • 1/2 teaspoon parsely
    • 1 teaspoon oil
    • salt to taste

    Instructions

    • Heat 1 tablespoon butter, 1 tablespoon oil.
    • Add 1/2 teaspoon cumin seeds let it splutter. Add 1 medium sized onion, 4 garlic cloves roughly chopped along with salt to taste.
    • Saute until onions turn transparent.
    • Add 3 cups carrot skin peeled, edges trimmed and then roughly chopped.
    • Saute atleast for 3-5 mins or until the raw smell of carrots leave.
    • Add 2 cups water.
    • Let it come to a boil.
    • Cook covered for 10 mins or until carrots turn soft.
    • Keep checking after 7 mins.
    • Fork tender then switch off.
    • Transfer all the vegetables to a bowl. Strain and add it.
    • Add little of stock water to it.
    • Cool down completely.
    • Puree it fine as shown. Add more stock water if needed.
    • Add it back to the pan. Rinse the mixer with 1/2 cup water and add it too.
    • Mix it well with stock water. Adjust to desired consistency.
    • Let it boil for 5 mins.
    • Add salt to taste, 1/2 teaspoon pepper powder, 1/4 teaspoon red chilli powder, 1/2 teaspoon oregano, 1/2 teaspoon parsely. You can add 1/4 cup milk or fresh cream to make it more rich.
    • Mix it well.
    • Adjust consistency, check and add salt if needed.
    • Add 1 teaspoon lemon juice.
    • Keep covered till serving time.
    • Enjoy the soup hot with bread!

    Notes

    • You can also 1/4 cup fresh cream or milk at the last stage to make it more creamy and rich.
    • You can also pressure cook the carrots and grind it with sauted garlic.
    • The carrot soup is slightly sweet with milk and the sweetness in the carrot, so add pepper powder accordingly.
    • Choose tender fresh carrots for the soup. The color of the soup totally depends on the carrots.
    • Skip lemon juice if adding milk as it may curdle.

    Carrot Soup Recipe Step by Step

    Expert Tips

    • You can also 1/4 cup fresh cream or milk at the last stage to make it more creamy and rich.
    • You can also pressure cook the carrots and grind it with sauted garlic.
    • The carrot soup is slightly sweet with milk and the sweetness in the carrot, so add pepper powder accordingly.
    • Choose tender fresh carrots for the soup. The color of the soup totally depends on the carrots.
    • Skip lemon juice if adding milk as it may curdle.

    Serving & Storage Suggestion

    • I served with homemade french bread. You can serve with breadsticks, foccasia or just toasted bread too.
    • It keeps well in room temperature for a day and in fridge for 2 days. You can reheat and serve,however tastes best when had fresh.

    FAQS

    1.Can I make Vegan Carrot Soup?

    Yes you can replace butter with oil and make carrot soup. I have not added milk so it is already vegan.

    2.What other seasonings can I add to Carrot Soup?

    You can add pizza seasoning, chilli flakes, onion , garlic flakes etc. It purely depends on your taste and preference so feel free to add to your liking.

      Hi Sharmi, Tried it today. Thank you :). Its a nice way to include carrot in the diet. It makes a nice soup for a snowy day like today. Its yum. Made it without onion and garlic and used ghee instead of butter.
