Brown bread recipe a soft and eggless loaf which takes time and effort to make but worth it.Homemade breads are always a winner.Though I have tried bread only using wheat flour so far, my family loves it which motivates me to try different wheat bread recipes.
About this brown bread recipe, I always wanted to try the sponge method of bread making so when I saw this in a facebook group quickly jotted down but missed the source.I had tweaked the recipe a bit according to my preference and the experiment turned out to be a success.

Ingredients
For the sponge:
- 1 and 1/4 cups whole wheat flour
- 1 and 1/4 cups water
- 2 and 1/2 tbsp sugar
- 3/4 tbsp instant yeast*
For the bread:
- 2 cups wheat flour
- 1 tsp salt
- 2 tbsp oil
- 1 to 2 tbsp water(if needed)
- extra oil and flour to dust
Instructions
- To a mixing bowl - add flour,yeast and sugar.
- Add water.
- Mix it once.Set aside for atleast for 1 hour for the sponge to get doubled This is how it looked after an hour.
- Now mix it once, then add remaining flour and oil.
- Add salt and extra water if needed to form a dough.It should come together and form a non sticky dough.
- Knead for 5 mins, use your palms fold and knead as shown in the pic.Keep covered and allow it to rest for an hour or until it gets doubled.
- This is how it looks after an hour.Knock down and knead for 2 mins for a smooth dough.
- Slightly flatten it then roll tightly from one side and finish it off till the end.Seal the edges on both the sides.
- Flip over and pinch the edges.Grease the bread loaf pan with oil and dust with flour.Now the load it ready to proof again.
- Place the prepared loaf inside the pan and let it rest for 30 mins. In the last 10 mins preheat oven at 180 deg C.You can brush the top with little milk before baking.Bake in preheated oven at 180 deg C for 30 mins.
Notes
- I use homemade wheat flour so the water added was a little more I add around 3 tbsp water to bring the dough together.Adjust water according to your flour and dough consistency.
- The rising time may vary according to your climatic conditions.In india now its hot so it made the proofing faster.
- I used instant yeast, if you are using active dry yeast you can use 1 tbsp.
