Peanut Butter Cookies Recipe

Peanut Butter Cookie is a variant of cookie that uses peanut butter as the main ingredient. They generally are flavorful and have rich, nutty taste and that is due to the presence of peanut butter. Peanut Butter Cookies are flavorful, nutty cookies made using flour, peanut butter, milk, butter and rising agents. Peanut Butter Cookies is a treat for peanut lovers and healthy compared to the packed biscuits.

  • Take demerara sugar in a mixer and powder it fine, Set aside.
  • In a mixing bowl add wheat flour, maida and baking soda.
  • Whisk it well, Set aside.
  • Melt butter , add sugar and whisk it well.
  • Then add peanut butter.
  • Mix well till it forms a creamy mixture.
  • Then add flour mixture.
  • Mix well with your hands and bring everything together, add little milk to form a soft dough.
  • Take small lemon sized ball and flatten it with your palms.
  • Lay butter paper / silver foil in the baking try and arrange the flattened patties.
  • Preheat oven at 180 deg C for 10 minutes.
  • Dip a fork in flour and press it horizontally and vertically to get cris cross lines.
  • Bake it in preheated oven at 180 deg C for 15-20 minutes or until the edges start to brown. If you slip over and see, if you see the golden brown color then the cookies are done.
  • Cool down in wire rack and then store.
  • Cool down and then store in airtight container.
  • Serve Peanut Butter Cookies warm with a glass of milk or as a tea time snack.

Notes

  • Healthier variant - For a healthier option, you could opt for whole wheat flour or almond flour, but I am not sure of the outcome.
  • Sweeteners - Instead of using demerara sugar, you can opt for honey or maple syrup.
  • Butter: Butter should be brought to room temperature and then melted and measured.
  • Oven settings - The oven should be preheated before baking. Additionally, the center rack is the best preferred choice due to even heat distribution.
  • Refrigeration - You can keep the dough in fridge until preheating time as this prevents the cookies from spreading too thin, but I skipped doing this.
  • Baking time - The baking time depends on the cookie size and thickness. A thicker cookie might take anywhere between 20 minutes to get baked completely, so adjust the timing accordingly.
