Chicken Pasta Recipe

This Chicken Pasta is a wholesome dish made using pasta, chicken, garlic, spring onion, herbs and spices. It is creamy, comforting and irresistibly delicious and will be liked by the entire family. This is one of our staple weekend one pot dish for dinner. Recipe included with step by step pictures and video.

Ingredients

  • 1 cup penne pasta
  • 4 cups water
  • salt to taste
  • few few drops oil
  • 1 ½ tablespoon oil
  • 1 tablespoon garlic
  • 2 tablespoon spring onion stem
  • 3 tablespoon pasta sauce
  • 1 teaspoon paprika
  • 1 teaspoon mixed herbs
  • 2 tablespoon fresh cream
  • 2 tablespoon spring onion
  • salt to taste

Marinade for chicken

Instructions

  • Take 100 grams breast chicken cubed into small pieces in a bowl. Add 1 teaspoon garlic powder, ½ teaspoon pepper powder, ½ teaspoon red chilli powder and salt to taste.
  • Mix it well and set aside.
  • Boil around 4 cups water in a sauce pan. Add salt to taste, few drops of oil.
  • Add 1 cup penne pasta.
  • Mix it well and let it cook in medium flame.
  • Cook till fork tender.
  • Transfer to a strainer, rinse with cold water to stop further cooking - Set aside.
  • Heat 1 ½ tablespoon oil - add 1 tablespoon garlic finely chopped, saute until golden.
  • Add 2 tablespoon spring onion stem and saute for a minute.
  • Add marinated chicken.
  • Saute for few minutes until it turns soft and gets cooked. Chicken bread cooks faster and takes just 3-5 minutes to cook.
  • Add 3 tablespoon thick pasta sauce along with ½ cup water. Give a quick mix.
  • Mix well and add 1 teaspoon paprika and 1 teaspoon mixed herbs. Adjust water according to the thickness of the pasta sauce. Give a quick mix and simmer for a minute.
  • Add 2 tablespoon fresh cream. Add salt to taste.
  • Mix well then add cooked pasta.
  • Give a quick mix until the sauce coats the pasta completely. Finally add 2 tablespoon spring onion, give a quick mix and switch off.
  • Serve hot!

Notes

  • Pasta - I used penne pasta variety, you can choose your favourite. Macroni, fusilli will work too.
  • Onion - If you want add 1 big onion chopped finely and sauté after adding garlic.
  • Spice level - This is little spicy so adjust spice level according to your taste buds.
  • Sauce - Don't make the sauce too thick then it will be very dry and will not coat the pasta. The pasta with the masalas should be juicy and not dry.
  • Chicken - Cut chicken into small bite sized pieces so that it gets cooked faster and also the masalas easily blend with it. Cooking chicken along with the sauce gives a nice flavor and juiciness to the chicken and chicken flavor to the pasta.
  • Stock - If you are cooking chicken separately without any spices then use chicken stock to cook pasta.
