    Veg Uttapam is a spongy, tasty thich crepe made with mixed vegetables. Veg Uttapam is a healthy alternate to regular uttapam and could be made with idli, dosa batter.

    Veg Uttapam is  an easy oothapam made with mixed vegetables.

    This is a simple oothapam recipe with mized vegetables.Do try this for breakfast or dinner for a  change and enjoy.It looks colorful and is a treat for the eyes so kids will surely like it too.

    I got this small oothapam a while back and had been using if often so thought o try this vegetable oothapam and share it here.This is best for packing for lunchbox too.

    Veg Uttapam

    Ingredients

    • 100 g idli dosa batter

    For vegetable mix:

    • 2 tablespoon onion chopped finely
    • 2 tablespoon capsicum chopped finely
    • 1 tablespoon tomato chopped finely
    • 2 tablespoon carrot chopped finely
    • 1 piece green chili chopped finely
    • 1 tablespoon coriander leaves

    Instructions

    • To a mixing bowl add all the ingredients listed under 'for vegetable mix'. Mix well and set aside. G
    • et ready with idli dosa batter, the batters should be thick and flowing.
    • To a dosa pan spread oil slightly add a ladle full of batter in each hole. Cook for a minute then add the vegetable mix on it.
    • Cook covered for 2 mins in low medium flame. Flip over and cook for 2 mins.
    • Press slightly, then flip and serve Veg Uttapam hot with chutney of your choice.

    How to make Veg Uttapam Recipe

    1. To a mixing bowl add all the ingredients listed under ‘for vegetable mix’.Mix well and set aside.Get ready with idli dosa batter, the batters should be thick and flowing.

    Murungai Keerai Uttapam,I learnt this recipe from my SIL.This is actually not a recipe just a great idea to include drumstick leaves for kids without cooking it much so the nutrients are not lost.Murungi keerai or drumstick leaves has a lot of medicinal benefits, rich in iron and protein, very good for your eyes too.

    Last time when I went to chennai I saw my SIL making this for her kids and I was doubtful how it will taste as we are adding the leaves raw.But to my surprise both mittu and gugu had it without complaints when it was served for them too.

    Drumstick leaves cooks easily especially when the leaves are tender and fresh.So when I got these tender leaves at once made and clicked it.The flavour of ghee with drumstick leaves on the oothapam is so good that even who is not fond of greens will love it for sure just like me.

    Murungai Keerai Uttapam

    Murungai Keerai Uttapam is a tasty crepe made by topping up murungai keerai over the batter after spreading it on pan in the regular making of uttapam. Murungai Keerai Uttapam is a healthy twist to the uttapam that even kids who do not like greens will like it.

    Ingredients

    • 1 cup idli dosa batter
    • 1/2 cup murungai keerai / drumstick leaves
    • ghee as needed

    Instructions

    • Pluck the drumstick leaves from the stem and set aside.
    • If the leaves are tender then the tiny stems can be added too. Rinse it well twice and drain water. Set aside.
    • Heat dosa tawa. Add 2 ladles of idli dosa batter and do not spread. It should be thick.
    • Sprinkle a generous handful of drumstick leaves on it. Drizzle oil or ghee.
    • Now slide the uttapam to the side of the tawa, spread ghee on the dosa tawa, now flip the uttapam so that leaves part touches the dosa tawa where we have drizzled ghee, simmer.This is for nicely roasting the leaves so that it becomes slightly crisp.
    • Press and let it cook for few seconds, do not let it brown. Flip and now the uttapam is ready to serve.

    Murungai Keerai Uttapam Recipe Step by Step

    1. Pluck the drumstick leaves from the stem and set aside.If the leaves are tender then the tiny stems can be added too.Rinse it well twice and drain water.Set aside.
