Quinoa kheer recipe

Quinoa kheer is a creamy dessert made with quinoa, flavoured with cardamom and saffron.
Prep Time10 mins
Cook Time20 mins
Total Time30 mins
Servings2

Ingredients

  • 1/4 cup quinoa
  • 1 tsp ghee
  • 1 cup milk (3/4 cup + 1/4 cup)
  • 3 tbsp sugar
  • few strands saffron
  • a pinch of cardamom powder
  • 2 tsp chopped pistachios (just for garnish)

Instructions

  • Measure quinoa, rinse it in water atleast twice then soak in water for atleast 15mins.
  • Drain and set aside.Heat ghee in a pressure cooker, add drained quinoa.
  • Saute for 3-5 mins in low flame until a nutty flavour comes. Now add 1/4 cup milk and 1/4 cup water.
  • Add a spoon to it to avoid milk overflowing while pressure cooking.Pressure cook for 2-3 whistles.
  • Now remove the spoon and check quinoa, it will be soft. Now add remaining 3/4 cup milk.
  • Add saffron, let it boil for a 2 mins or until it starts to thicken.
  • Now add sugar and let it cook for 5 mins in low flame.
  • Add cardamom powder and let it cook for 2 mins, finally garnish with chopped pistachios.

Notes

  • Simmer in low flame so that milk thickens and gives a nice creamy kheer.
  • You can add any nuts of your choice,as I had made the kheer like rabri I added just pistachios.
  • It thickens with time so switch off accordingly. You can add little milk(boiled) while serving if it becomes very thick.
