Kuska rice recipe, How to make kuska rice

Kuska rice comes of great help when u dont have any veggies in stock or no time for chopping. This is a very simple and comforting dish.Check out hotel style kuska biryani here.

Kuska rice

Ingredients:
  • Rice – 1 cup
  • Onion -1
  • Tomato -1
  • Ginger garlic paste – 1/2 tbsp
  • Turmeric powder – 1/4 tsp(optional)
  • Red Chilli powder – 1 tsp
  • Coconut milk – 2 tbsp
  • Water – 1.5 cups
To temper:
  • Ghee – 1 tbsp
  • Oil -1 tbsp
  • Cardamom – 1
  • Brinji leaf – 1
  • Cloves – 2
  • Cinnamom – 1/2 inch piece
To grind to a smooth paste:
    • Green chillies -1
    • Coriander leaves – 1/4 cup loosely packed
  • Mint leaves – 1/4 cup loosely packed
Kuska rice
Method:
1.Wash and soak rice for 15mins,set aside.Grind coriander,mint leaves along with green chillies to a fine paste,set aside.In a kadai add 1 tbsp ghee add brinji leaf, cloves, cinamom, cardomom,let it splutter.Kuska rice2.Then add onions, ginger garlic paste saute till slightly browned then add tomato and saute well till mushy, add turmeric powder then add the mint coriander paste along with red chilli powder.Saute till raw smell leaves.Add required salt.Kuska rice3.Add the rice, give a quick stir, then add water,coconut milk and pressure cook for 3-4 whistles in medium low flame.

    Hi, My hubby never likes rice varieties. Just gave this recipe a try…since then he likes eating this rice alone. Sometimes I add either veggies or mushroom to the rice. Like all your recipes since they are so simple and easy!

    I try cook myself, I Tried your recipie it came nice, but the water content i pour was not enough so the rice did not boil well, actually it was my mistake, even though the taste was quiet good. thank u.

    @Syed: Oh thats great to hear…yeah the water level depends on the variety of rice we use too…may be next time you can adjust accordingly.

    kuska rice name reminded me of khusa khusa…poppy seeds. thot the ingredient will have that as one of the items..looks simple to make. nice recipe
