    I have been waiting to try these cornflakes cookies since I saw them. They were truly tempting and after baking now I know they are quite addictive too. Yes couldn’t stay away from these buttery goodness.

    About Cornflakes Cookies

    Cornflakes Cookies are made using butter, flour, sugar and cornflakes as main ingredients. The crunchy cornflakes in these cookies are so good that you cannot stop with one. These are crispy on the outside and crunchy inside! Do try these easy and quick to make cornflakes cookies and enjoy!

    Cornflakes Cookies can be made using wheat flour too for a healthy alternate. These cookies comes together quickly so can be made even at the last minute. These cookies are perfect for gifting for holiday season.

    Cornflakes Cookies Ingredients

    • Flour – All purpose flour or maida is used for this recipe. However you can use wheat flour too, have given the recipe in variations.
    • Butter – Butter at room temperature is used but it is okay if it is chilled you can use a whisk to soften it.
    • Sugar – Granulated white sugar is used.
    • Cornflakes – I have used regular plain cornflakes, you can use flavored too.
    • Vanilla – Vanilla essence gives a nice flavor to the cookies.
    • Salt – Use salt if your butter is unsalted, if you are using salted butter then skip salt.

    How to make Cornflakes Cookies Step by Step

    1.Crush cornflakes(Both 1/2 and 1/4 cup together)coarsely or grind it in a mixer like I did. In a mixing bowl – add butter, vanilla essence and sugar.

    2.Beat it well with a whisk until fluffy and creamy. Sieve flour and baking powder twice at least.

    3.Now add the flour and 1/2 cup cornflakes and mix gently to form a soft dough. If the dough is too crumble add 1 teaspoon of water and knead it. After forming the dough refrigerate for 15-30 minutes. Then take out the dough and roll it to a cylinder and cut into small equal pieces.

    4.Preheat oven to 177 deg C for 10mins. Meanwhile roll them into balls and slightly flatten them using your palms , now dip it in the cornflakes mixture(1/4 cup) so that it is evenly coated on all sides .Arrange the cookies in a parchment sheet / butter paper leaving 1 inch gap(the cookies don’t spread much) and bake the cookies for 12-15 minutes keeping the tray in the middle rack or until the edges start browning.

    Cool down then store the cookies.

    Expert Tips

    • If the cornflakes don’t stick to the cookie dough, take few drops of water in your fingertips, and coat the cookie dough ball with water and then roll in cornflakes.
    • After 12 minutes keep an eye on the oven, if you overbake the cookies will become hard.
    • Once baked, remove the cookies from the oven and cool on a wire rack. They will still be soft when they come out of the oven, but will firm up once they cool.
    • If the cookie dough out of the fridge is too stiff, break it up into smaller pieces, add 1 tablespoon water, knead gently then roll them. Refrigerating the dough helps in retaining the shape and avoids spreading of cookies.Also it results in a more flakier cookies. But if you are in a hurry then just skip the chilling part and leave nice gap between the cookies and bake them.
    • You can even add the cornflakes to a zip lock bag and roll with a chapati roller to crush it roughly. You can also press cashews in each cookie as in the original recipe.

    Serving and Storage

    Store the cookies in an airtight container. Cornflakes Cookies tastes great on its own or with a cup of milk. It keeps well in room temperature for around 5 days.

    Ingredients

    • 1/2 cup maida / all purpose flour ~67 gms
    • 1/2 cup + 1/4 cup cornflakes
    • 1/4 cup unsalted butter ~50 gms

      Hi..i tried the cornflakes cookies today..but with the above measurements my dough was so wet that i had to double the quantity of maida..any clue why ?

      I have been following your cookie recipes. My otg is Morphy richards 18ltr. Whenever I bake cookies using the baking tray, the bottom of the cookies get burnt in 5 mins. I have tried using baking sheet as well as aluminuim foil. Is there anything specific brand that use for lining?

        No I don't actually use lining these days just use the black tray as such for baking cookies…If you want you can use butter paper or aluminium foil..May be try changing the tray

      hi sharmila I am very new to baking. just recently got my OTG as a housewarming gift from my daughter. I am also on the road to recovery from a very grave illness. cooking traditional foods is what I know but cookery is my life. now when browsing cookery blogs came across yours and instantly fell in love .very gud and simple to follow recipes for a novice, today did this one and it came out wonderful crunchy.. thank you dear for an evening spent with my passion. my age is 52 but what is age when it comes to learning

      Hi, I made these with multi-grain flour and jaggery instead of sugar. They came out beautiful. Only thing is you will need to use more jaggery. Also you will need to add water to make the dough come together. Also I used the entire cornflour amount mentioned in the recipe plus for the coating I used more crushed cornflakes as required. These cookies were hit in my family and were devoured while they were still warm from the baking.
