    I always wanted to try a mild pulao which goes well with any gravy or to be had as such and finally it happened.

    I got this parcel last week from Kapiva which had Ghee and Wild Honey. I first tasted wild honey and loved it.Both the ghee and honey tastes good.Kapiva is a functional foods brand bringing selectively sourced, natural foods to consumers.

    Cashew Pulao | Kaju Pulao

    Ingredients

    • 1/2 cup basmati rice
    • 1/2 cup onion sliced
    • 1 cup water
    • 10 nos whole cashews
    • 2 teaspoon oil
    • 2 teaspoon ghee
    • salt to taste

    To temper:

    • 1 tablespoon ghee
    • 1 no small bayleaf
    • 1/4 inch cinnamon
    • 2 nos small cloves
    • 1 no cardamom
    • 1/2 teaspoon cumin seeds
    • 1 no green chilli(slitted)
    • 1/2 teaspoon crushed ginger garlic

    Instructions

    • Heat oil in a kadai add onion and fry until golden brown and crisp.Set aside.
    • Soak basmati rice for 15 mins.Meanwhile in a pressure cooker heat ghee add the items listed under 'to temper'.
    • Let it crackle, give a quick saute.
    • Then drain water from rice completely then add it, give a quick saute for a minute.Add required salt.
    • Add 1 cup water.Pressure cook for 3 whistles in medium high.Switch off let pressure release by itself.Open and fluff it up.
    • Heat 2 teaspoon ghee in a kadai - fry cashews until golden and crisp.
    • Add fried cashews and onions, toss well. Serve Cashew Pulao hot!

    How to make Cashew Pulao
