Ingredients

  • 4 medu vada
  • 1/2 cup thick curd chilled
  • 1/4 cup milk + 2 tablespoon curd
  • 2 teaspoon green chutney
  • 2 teaspoon sweet chutney
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon chaat masala powder
  • 1 tablespoon coriander leaves finely chopped
  • 3 teaspoon sev / boondi for garnish / optional
  • salt to taste

Instructions

  • Make the vadas as per the instructions given in the urad dal vada link skipping the optional ingredients (jeera, pepper and curry leaves) alone.
  • First make the vadas ready. You can either make vada shaped or like bondas.
  • Take yogurt and milk in a bowl and whisk it well. Keep the vadas ready.
  • Soak it in the milk yogurt mixture for 30mins. Turn over in between.

At the time of serving :

  • Transfer the vadas to a serving plate. Then pour the thick yogurt mixed with salt over the vadas. Drizzle red, green chutney, sprinkle chat masala, red chilli powders. Garnish with coriander leaves and serve.
  • Enjoy your homemade dahi vadas! 🙂

Notes

  • Soaking the vadas in milk + curd mixture helps to avoid sourness.
  • Adding onions to the vada is purely your choice. You can skip it in the vadas and add raw onions while serving too.
  • The amount of green and sweet chutney can be adjusted to our preference. You can make the chaat chutneys ready the previous day and refrigerate to make it handy.
  • I used the remaining medu vadas so used it , you can make them as round bonda balls too.
