Tempered Rice | Thalicha Sadam

Tempered Rice is a tasty, native Indian rice made by tempering leftover rice with onion, spices and herbs. Tempered Rice is relished as lunch meal with fry / kootu or as an evening meal after school time.  Tempered Rice Recipe is explained in this post with step by step pictures.

Ingredients

To temper:

  • 2 teaspoon oil
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon urad dal
  • 1/4 teaspoon cumin seeds
  • a pinch hing
  • 1 no green chillies slitted
  • few curry leaves

Instructions

  • Keep your left over rice ready.In a pan heat oil - add the items listed under 'to temper' let it splutter.
  • Then add turmeric powder,hing and red chilli powder and mix well.
  • Then add chopped onion and saute for 2mins. Add sambar powder. Add required salt.
  • Saute for a minute until onions turn slightly soft.
  • Then add cooked rice and give a quick toss.
  • Serve Tempered Rice hot with papad.

Notes

  • If you are using fresh cooked rice then cool down completely then use it.
  • You can replace sambar powder with garam masala powder.
  • You can even add cooked vegetables along with rice.
