I love kesari – be it rava kesari or milk kesari or even fruit kesari .I have tasted pineapple kesari twice but never tried it on my own. This time when I bought pineapple I tried pineapple kesari , I love pineapple flavor and the fruit very much so loved it to the core.

About Pineapple Kesari
Pineapple Kesari is nothing but kesari made using rava, sugar, ghee, pineapple, nuts and dry fruits. The flavoring and sweetness from pineapples gives this kesari a unique taste. Do try this easy, quick sweet and enjoy!
I made it when we had guests at home and they too loved it. I made adjustments to my rava kesari recipe and tried this pineapple kesari which came out so good that I wanted to post and record it.

Pineapple Kesari Ingredients
- Rava – I have used upma rava (hard wheat / semolina) for this recipe. This will be slightly coarse not very fine. Make sure to slow roast rava without changing the color much.
- Pineapple – Choose sweet ripe pineapple, cut into small cubes and use it.
- Ghee – Ghee is one the main ingredients for rava kesari so use pure good quality ghee. Homemade ghee is best however you can use store bought ghee also.
- Sugar – White sugar is used for rava kesari. I would not suggest to replace it.
- Flavorings – Cardamom and saffron are the main flavoring here.
- Garnishing – Cashews and raisins are added for garnish.

How to make Pineapple Kesari Step by Step
1.Heat a teaspoon of ghee and fry cashews first till slightly browned then add raisins and let it bubble up, transfer to bowl and set aside. Boil water and add the chopped pineapple pieces, let it cook in medium flame for 5 minutes till it becomes slightly soft.

2.Add the food color and let it boil one one side. Mean while heat a teaspoon of ghee and roast rava till nice aroma wafts. Now add the boiling pineapple water mixture to rava. This is the stage where you have to be very careful take care not to form lumps even if it forms break down.

3.Once you see rava is cooked then add sugar now it will start to loosen keep stirring continuously.

4.Add 2 tablespoon ghee and keep stirring till the mixture comes together as a mass slightly thick as shown below. Now add the ghee fried cashews and raisins and switch off.

Serve hot / warm!

Expert Tips
- If you want you can add pineapple essence but I didn’t add as I loved the natural pineapple flavor itself. I didn’t even add cardamom powder / kesar as I wanted full pineapple flavour. If you like you can add cardamom powder.
- Cook pineapple and then add it else it will be crunchy.
- Add sugar only after rava is cooked.
- I add 1.5 cups of water and boiled the pineapple mixture only for 5mins so the water quantity was not an issue for me. If you boil for more , water will evaporate and will become less which will not be the perfect measure to cook rava. So if you are doubtful measure water and then add it.
- Garnish with pineapple pieces, cashews and raisins.
- If you are adding yellow food color as powder then dissolve it in a teaspoon of water then add it, this is ensure even coloring. If you use liquid food color then you can add it directly.
Serving and Storage
Serve pineapple kesari hot or warm with a dollop of ghee. You can keep refrigerated for 1 day and while serving just heat it up , drizzle ghee give a quick stir and serve.
