Achinga Payar Mezhukkupuratti is nothing but kerala style long beans stir fry recipe.I have already posted few mezhukkupuratti recipes and this is my addition to the list.Actually I planned to make kaya achinga payar mezhukkupuratti but last minute plan changed as I didn’t have kaya so went ahead making with just long beans.
This is a popular side dish for rice and curry in Kerala.It is quick and easy to make too and pairs up well with rice.

Achinga Payar Mezhukkupuratti
Ingredients
- 20 nos long beans
- 2 tablespoon coconut pieces
- 6 nos small onion chopped finely
- a generous pinch of turmeric powder
- 1/2 teaspoon red chilli powder
- water to cook
- salt to taste
To temper:
- 2 teaspoon coconut oil
- a small sprig curry leaves
- 1 no long green chilli slitted
- 4 nos garlic crushed
Instructions
- Trim the edges of long beans. Cut into 1 inch long pieces. Rinse it in water.
- Rinse it well, drain water and keep aside.
- In a kadai or pan heat coconut oil - add crushed garlic, add curry leaves and green chilli. Saute for a minute.
- Then add chopped onion and saute for 2mins then add coconut pieces. Saute for few mins.
- Now add long beans along with turmeric powder, salt and red chilli powder. Saute well.
- Now add little water and cook covered.
- Cook until the beans becomes soft, give a quick stir and switch off. Serve Achinga Payar Mezhukkupuratti for lunch meal!
How to make Achinga Payar Mezhukkupuratti
- Trim the edges of long beans.Cut into 1 inch long pieces.Rinse it in water.
- Rinse it well, drain water and keep aside. First say hi to new steel kadai 🙂 In a kadai or pan heat coconut oil – add crushed garlic,curry leaves and green chilli.Saute for a minute.
- Then add chopped onion and saute for 2 mins then add coconut pieces.Saute for few mins.
- Now add long beans along with turmeric powder,salt and red chilli powder.Saute well.
- Now add little water and cook covered.
- Cook until the beans becomes soft, give a quick stir and switch off.
Serve with rice and any curry of your choice.
Enjoy with rice.
