Sweet Diamond Cuts Recipe

Spicy Diamond Cuts are made using a simple dough cut into diamonds, deep fried until crisp then tossed in powdered sugar. Also known as maida sweet biscuits or diamond cuts it is one of the easy snacks that you can make for festivals like Diwali. Learn to make Sweet Diamond Cuts with step by step pictures and video.

Ingredients

  • 1 cup maida
  • ¼ cup + 2 tablespoon powdered sugar
  • 1 tablespoon melted ghee
  • a tiny pinch of salt
  • water as needed
  • oil to deep fry

Instructions

  • To a mixing bowl add 1 cup maida, 2 tablespoon powdered sugar, 1 tablespoon melted ghee, a pinch of salt.
  • Mix this well first then add water little by little.
  • Start kneading.
  • Knead to a soft non sticky dough like this.
  • Keep it covered for 10 – 15 minutes.
  • After 10 minutes knead it once again.
  • Roll into lemon sized balls and flatten it slightly.
  • Dust flour place a ball and roll into slightly thin disc like chapathi. It should be slightly thin like this.
  • First cut vertically using the diamond cutter or pizza cutter. Now cut horizontally to get diamonds like this.
  • Separate them. Do not worry if it sticks, when we fry in oil it gets separated easily.
  • Heat oil – check by adding a small piece, it it comes up immediately then oil is ready.
  • Add few at a time. Once it rises up flip over to fry evenly.
  • Fry until golden color and bubbles stops.
  • Drain excess oil and remove using a ladle.
  • Repeat to finish. Add ¼ cup powdered sugar.
  • Toss it well until evenly coated.
  • Store in airtight container and enjoy!

Notes

  • You can use any roller knife / pizza cuter or even a simple knife to cut them into diamonds.
  • Make sure you knead a soft pliable dough not too loose. If its too loose then add little maida to get a tight dough more like chapathi dough. While rolling dust flour to avoid sticking.
  • You can use a metal spatula to separate and gather the diamonds.
  • As sugar is added in the dough, the biscuits gets browned faster so make sure to keep in low medium flame while frying.
  • You can even use half and half of wheat and maida flour.
  • You can even add a tiny pinch of cardamom powder or any mild essence for extra flavor. I love it plain.
