  • 1 tablespoon oil
  • 1 teaspoon garlic finely chopped
  • 1/2 teaspoon ginger finely chopped
  • 1/2 cup onion finely chopped
  • 1 cup tomatoes finely chopped
  • 1/4 cup capsicum finely chopped
  • 2 tablespoon carrots
  • 1 tablespoon tomato sauce optional
  • 1/2 cup pasta cooked water
  • 1 teaspoon coriander leaves
  • salt to taste
