Mango Panna Cotta Recipe

Ingredients

For mango layer

  • 1 cup mango puree 2 medium sized mangoes
  • 2 tablespoon sugar
  • ½ teaspoon agar agar powder
  • ¼ cup water

For milk layer

Instructions

Preparing mango layer

  • Peel the skin from 2 medium sized mangoes and chop hem roughly. Blend to a thick puree without adding water. Measure 1 cup puree and set aside.
  • To a sauce pan add ¼ cup water along with ½ teaspoon agar agar powder.
  • Whisk it well until it dissolves completely.
  • Let it boil for few seconds.
  • Now 1 cup mango puree along with 2 tablespoon sugar.
  • Whisk well and cook for 1 minute until sugar dissolves completely. Switch off.
  • Pour into dessert bowls or pudding molds and let it set in fridge for 2 hours.

Preparing cream layer

  • After 2 hours now make the second layer. To a sauce pan add ½ cup full cream milk(boiled).
  • Add ½ cup fresh cream to it.
  • Add 3 tablespoon sugar.
  • Whisk it well until sugar dissolves completely.
  • Now add ½ teaspoon agar agar powder.
  • Whisk it well until it dissolves. Cook for a minute or until it starts to boil at the sides. Do not let it boil.
  • Switch off and now add ¼ teaspoon vanilla essence.
  • Mix it well.
  • Now remove the bowls from fridge and pour the second layer. Make sure the mango layer is set fully before pouring. Set in fridge for 2 hours.
  • After 2 hours it is set. Now add chopped mangoes.
  • Serve chilled!

Setting the Panna cotta

  • For getting a slant layer first place the glasses in muffin pan in a slightly slant position like shown here.
  • Now pour the mango layer first.
  • Once set add the milk layer.

Notes

  • If using agar agar strips then cut into small pieces and dissolve it in water then add the mango puree. Take care to dissolve the strands completely.
  • Agar agar powder is easy to dissolve in any liquid so I recommend using it
  • Panna cotta needs at least 4 hours of setting time so plan ahead.
  • Grease the bowls well if you are planning to unmold and serve.
  • Do not add more agar agar powder than mentioned as it may make the panna cotta firm.
