Heat oil in a kadai. Check if oil is hot by adding 1 cornflake if it rises immediately then it is ready. Use dried raw cornflakes and not the cereal variety.
Add 3 cups raw cornflakes in batches. I fried in 4 batches. Add it and fry until 'shh' sound stops. Drain from oil and remove.
Add it to a straining basket. Repeat to finish the other batches too. Place a plate underneath the basket to collect the extra draining oil.
Add ½ cup fried gram dal. Fry until golden, drain, remove and add it to the basket.
Add ½ cup peanuts. Fry until golden brown, drain, remove and add it to the basket.
Add ¼ cup cashews. Fry until golden, drain, remove and add it to the basket.
Add ¼ cup raisins. Fry until golden, drain, remove and add it to the basket.
Switch off and add ¼ cup curry leaves. Fry until crisp, drain, remove and add it to the basket.
All fried and ready.
Transfer this to a big mixing bowl. Add salt to taste, ½ teaspoon turmeric powder, 1 tablespoon red chilli powder, 2 teaspoon powdered sugar, ¼ teaspoon hing.
Toss well for even mixing. Gently toss without breaking the cornflakes.
