    I can eat pudalangai podimas even as such, love it so much. I am not fond of the kootu or poriyal we make with it, but like this podimas so wanted to quickly jot down the recipe here. Have a nice weekend, will catch you all on Monday.

    About Pudalangai Poriyal

    Pudalangai Poriyal is made by roasting pudalangai (snake gourd) with spices, onion, coconut,dal and tempering spices. Pudalangai Poriyal is healthy and could be made easily with available ingredients.

    Pudalangai Poriyal pairs up well with rice and even roti. It is a dry side dish but tastes so good with the aromatic whole spices and cashews. This is my mother’s recipe passed on from my grandmother and it is my most favorite.

    Pudalangai Poriyal Ingredients

    • Pudalangai – Pudalangai or snake gourd is first cleaned then cut roughly, pulsed and used.
    • Onion – Onion is finely chopped and sautéed.
    • Coconut – Grated coconut is used at the final stage.
    • Tempering – This poriyal is first tempered with bay leaf, cinnamon, cloves, garlic and green chilies.
    • Cashews – Cashews add a nice crunch to this poriyal.

    How to make Pudalangai Poriyal Step by Step

    1.Soak chana dal in water for an hour, keep aside. Clean snake gourd and chop it roughly. Then grind the veggie with chana dal coarsely. I used my chopper to grind, dont make it to a paste, it should be in bits and pieces. If you use mixer, then use the blend option and run once for a second that is enough. It may let out water so squeeze it and keep aside.

    2.Roast cashews in little oil until golden brown, set aside. In a non stick pan heat remaining oil and add the items under ‘to temper’ then add onions and sauté till golden brown. Then add the veggie with chana dhal. Add required salt and give a quick stir.

    3.Keep sautéing and take care not to burn it. No need to add water, sauté until it turns to a slightly brown shade. At this stage add roasted cashews and coconut, mix well and sauté till coconut turns slightly browned. Switch off.

    Expert Tips

    • Adjust coconut as per your liking. You can add in more if you prefer
    • Take care not to burn the vegetable, it should be sautéed well till it becomes golden brown.
    • Adding cashews is optional but enhances the flavor and adds crunch.

    Serving and Storage

    Pudalangai Poriyal can be served with rice, roti etc. This curry keeps well in fridge for 2 days, reheat and serve it.

    Ingredients

    • 1 cup pudalangai / snake gourd
    • 2 tablespoon chana dal
    • 1 big onion chopped finely
    • 1 and 1/2 tablespoon coconut grated
    • 5 cashews broken into small pieces
    • salt to taste
    • 2 teaspoon oil

    To Temper:

    • a small piece bay leaf
    • 1/4 inch piece cinnamon
    • 3 cloves
    • 5 garlic chopped finely
    • 2 green chilies chopped finely

      First time here, came from Rak's kitchen. Beautiful blog. Snake gourd fry is one of my favorite side dishes too. I haven't made it with onions though, will try next time.
