Sukku Coffee Recipe

Sukku Coffee is a traditional Indian beverage made using dried ginger, coriander seeds and other spices. It is also known as Chukku Kaapi or Sukku Malli Coffee. Ingredients

To prepare sukku coffee powder

  • 1 cup dried ginger sukku
  • ½ cup coriander seeds
  • 1 tablespoon black pepper
  • 6 cardamom

To prepare sukku coffee(without milk)

  • 1 cup water
  • 1 teaspoon sukku coffee powder
  • 1 tablespoon palm sugar candy

To prepare sukku coffee(with milk)

  • ½ cup milk
  • ½ cup water
  • 1 teaspoon sukku coffee powder
  • 1 tablespoon palm sugar candy

Instructions

  • Take 1 cup dried ginger(sukku), First rinse it well and dry it. Then peel the skin and discard.
  • Using a mortar and pestle roughly crush it and set aside.
  • To a pan add ½ cup coriander seeds, 1 tablespoon black pepper and 6 cardamom.
  • Dry roast it well until golden, nice aroma comes. Dry roast in low medium flame, do not burn the spices.
  • Add the dry ginger.
  • Give a quick saute then switch off.
  • Cool down completely then transfer to a mixer jar.
  • Grind it to a fine powder. Cool down then store in an airtight container.
  • To a sauce pan add 1 cup water to it along with 1 teaspoon prepared sukku coffee powder, 1 tablespoon palm sugar candy. You can adjust sweetness according to your preference. Mix it well first.
  • Boil well for 2 minutes in medium flame then switch off.
  • Transfer it to a strainer, strain and discard the remains.
  • Pour into serving glass and serve hot!
  • Add ½ cup milk to a sauce pan, ½ cup water, 1 teaspoon sukku coffee powder. Mix it well first.
  • Let it come to a rolling boil, simmer for a minute then switch off.
  • Now add 1 tablespoon palm sugar candy.
  • Transfer it to a strainer, strain and discard the remains.
  • Pour into serving glass and serve hot!
  • Sukku coffee is ready!

Notes

If you feel its is little spicy, then add ¾ teaspoon for 1 cup water.
Usually sukku coffee is made only with water, but if you prefer you can have it with half and half milk, water.
You can store the homemade sukku coffee powder up to 2-3 months.
Karupatti(palm jaggery) or panangkarkandu (pal sugar candy) can be used as a sweetener.If you like you can have it without sweetener too.
