Pista Popsicle Recipe | Pista Ice Recipe

Pista Popsicle is one of those summer treats which is very refreshing and tasty too. It is nothing but frozen milk ice flavored with pistachios, essence for that nutty aroma. The creamy taste with pista flavor makes it more special than a normal ice pops.

Ingredients

  • 3 cups milk
  • 3-4 drops pista essence
  • ¼ cup sugar
  • 20 pistachios

Instructions

  • Boil milk and simmer for 5 minutes until milk is reduced a little.
  • Then cool down completely and add sugar.
  • Add pista essence and mix well. Mix well, set aside.
  • Now take pistachios in a mixer and grind it to a coarse mixture.
  • Add pista powder to milk and mix well. Whisk it well.
  • Pour the mixture into popsicle molds or any teacups till ¾th of the rim.
  • Cling wrap it with aluminum foil, carefully prick with a knife then insert ice cream sticks.
  • Alternately you can even close it with your popsicle mold lid itself.
  • Freeze it for at least 8 hours.
  • Then take it out and carefully show the outer surface under running tap water. Carefully pull out the popsicles.
  • Serve Pista Popsicle immediately!

Notes

  • Milk choice – I have used full cream milk but you can use low fat milk if you like a lighter version. Just note the creaminess will be less.
  • Grinding pistachios – I usually grind it coarsely so that little nutty bites come in each lick. You can grind very fine for smooth texture popsicle.
  • Freezing time – I always keep it overnight for best result. Minimum 6 hours is needed for popsicles to set well.
  • Unmolding – I usually show the mold under running water for few seconds, then gently pull out the popsicle. Don’t force as it may break.
  • Mold options – If you don’t have popsicle molds, you can use small paper cups or even steel tumblers. Just cover and insert a stick in center before freezing.
