Paneer Fried Rice Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 cup paneer small cubes
  • 2 tablespoon olive oil
  • 1 and ½ tablespoon garlic
  • ¼ cup carrot
  • ¼ cup green capsicum
  • ¼ cup yellow capsicum
  • ¼ cup cabbage
  • salt to taste
  • ½ teaspoon pepper powder
  • ½ teaspoon sugar
  • ½ teaspoon soya sauce
  • 3 cups cooked basmati rice
  • 1 teaspoon crushed pepper
  • 1 tablespoon spring onion

Instructions

  • To a wok or pan heat 1 tablespoon olive oil - add 1 cup paneer(small cubes). Add little salt and toast it.
  • Toast until golden, remove to a bowl and set aside.
  • Add 2 tablespoon olive oil - add 1 and ½ tablespoon garlic. Saute until golden.
  • Add ¼ cup carrot, ¼ cup green capsicum, ¼ cup yellow capsicum and ¼ cup cabbage.
  • Saute in high flame for 2 minutes. Add salt to taste, ½ teaspoon pepper powder, ½ teaspoon sugar and ½ teaspoon soya sauce.
  • Saute in high flame for 1 minute.
  • Add toasted paneer.
  • Give a quick mix.
  • Then add 3 cups cooked basmati rice.
  • Mix it well then add 1 teaspoon crushed pepper and 1 tablespoon spring onion.
  • Toss in high flame for a minute. Switch off.
  • Paneer fried rice is ready!

Notes

  • I reduced the quantity of veggies and added more paneer. But don't skip spring onions as it gives a good amount of chinese flavour to the fried rice.
  • You can add 2 tablespoon onion while sauteing the veggies.
  • You can even add green chilli sauce.
  • Use freshly ground pepper for a great flavor.
  • You can even crumble or grate the paneer and add it but in that case you will have to add it raw. I prefer toasting and adding.
  • Sauteing the veggies in high flame gives a nice smoky flavour and also retains its crunchiness without the raw smell.
  • I soaked basmati rice for 15 mins then pressure cooked for 1:1.5 ratio (rice : water) for 3 whistles in medium low flame.
  • I don't use ajino motto, but if you prefer you can add a pinch of it at the final stage to get the exact restaurant flavor.
  • Make sure to fluff the rice and spread it with little olive oil to make the grains separate. Allow it to rest at least for 30mins.
