To a wok or pan heat 1 tablespoon olive oil - add 1 cup paneer(small cubes). Add little salt and toast it.
Toast until golden, remove to a bowl and set aside.
Add 2 tablespoon olive oil - add 1 and ½ tablespoon garlic. Saute until golden.
Add ¼ cup carrot, ¼ cup green capsicum, ¼ cup yellow capsicum and ¼ cup cabbage.
Saute in high flame for 2 minutes. Add salt to taste, ½ teaspoon pepper powder, ½ teaspoon sugar and ½ teaspoon soya sauce.
Saute in high flame for 1 minute.
Add toasted paneer.
Give a quick mix.
Then add 3 cups cooked basmati rice.
Mix it well then add 1 teaspoon crushed pepper and 1 tablespoon spring onion.
Toss in high flame for a minute. Switch off.
Paneer fried rice is ready!
