To a bowl add ¾ cup flour, ½ teaspoon baking soda, ¼ teaspoon salt.
Whisk it well for even mixing. You can even sieve it alternatively.
Preheat oven at 180 deg C for 10 minutes. To a mixing bowl add ½ cup butter, ½ cup castor sugar, ½ cup brown sugar. Make sure butter is at room temperature.
Whisk well until creamy.
Add 1 egg, 1 teaspoon vanilla essence. Make sure egg is at room temperature.
Whisk well until creamy and smooth.
Add flour mix.
Add 1 and ½ cups rolled oats.
Mix it using a spatula until combined. The dough is sticky, you can chill the dough for 30 minutes to make the cookies spread less.
Using a cookie scooper scoop out, you can even use 1 tablespoon measure to scoop out if you don't have cookie scoop.
Scoop out the dough on parchment paper laid on the baking tray.
Leave enough space as the cookies will spread. I baked in 2 batches.
Bake at 190 deg C for 8-10 minutes or until the edges start to turn golden brown.
Soft chewy oatmeal cookies are ready!
