Oatmeal Cookies Recipe

These Oatmeal Cookies are soft and chewy making it undoubtedly one of the best oatmeal cookies. Use this oatmeal cookie base recipe to make perfect cookies every time. Ingredients

  • 1 and ½ cups rolled oats
  • ½ cup unsalted butter (room temperature)
  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • 1 medium sized egg (room temperature)
  • 1 teaspoon vanilla essence
  • ¾ cup flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  • To a bowl add ¾ cup flour, ½ teaspoon baking soda, ¼ teaspoon salt.
  • Whisk it well for even mixing. You can even sieve it alternatively.
  • Preheat oven at 180 deg C for 10 minutes. To a mixing bowl add ½ cup butter, ½ cup castor sugar, ½ cup brown sugar. Make sure butter is at room temperature.
  • Whisk well until creamy.
  • Add 1 egg, 1 teaspoon vanilla essence. Make sure egg is at room temperature.
  • Whisk well until creamy and smooth.
  • Add flour mix.
  • Add 1 and ½ cups rolled oats.
  • Mix it using a spatula until combined. The dough is sticky, you can chill the dough for 30 minutes to make the cookies spread less.
  • Using a cookie scooper scoop out, you can even use 1 tablespoon measure to scoop out if you don't have cookie scoop.
  • Scoop out the dough on parchment paper laid on the baking tray.
  • Leave enough space as the cookies will spread. I baked in 2 batches.
  • Bake at 190 deg C for 8-10 minutes or until the edges start to turn golden brown.
  • Soft chewy oatmeal cookies are ready!

Notes

  • Adding a mix of white sugar and brown sugar gives perfect texture to the cookies.
  • The cookie dough is sticky. If you don't want the cookies to spread much then chill the dough for 30 minutes and then bake. I baked it immediately and it spread as you can see.
  • Do not over bake, 8 -10 minutes when it starts to turn golden turn off.
  • You may feel the sweetness a bit high the moment you taste it, give some resting time of minimum 2 hours and they are perfect.
  • I got around 18 bite sized cookies.
  • You can use either light brown sugar or dark brown sugar.
  • Using castor sugar makes it easy to blend and dissolve. However you can use granulated sugar too.
